Finally tried this < Zagin Soba > that has been widely appreciated by Hongkongers. Did not disappoint but did not especially surprise given the price point.
-The joint serves three options of ramen - chicken broth, seafood chicken broth and tsukemen.
Tried the first two ($138). Both had a rich, thick broth that had a foam on top as the broth is whipped with what's similar to the method of whipping coffee.
Both were flavorful but not salty, and I didn't feel like I was having too much MSG.
Both came with a slice of sous-vide pork and chicken breast which were tender as well as deep-fried burdock. The burdock was crispy and definitely enhanced the overall presentation of the ramen.
Size was not too big and just right but to some it might not be fulfilling enough.

在跑馬地及中環也有分店的《座銀》，來自大阪🇯🇵，主打「雞白湯拉麵」
拉麵選擇不多，只有少少的三項選擇這次嚐了兩道湯拉麵還有一份糖心蛋
準備這篇食評的時候，才看見網民大多推薦他們的沾麵還有炸雞，唯有等有機會再來試試吧😆

雞白湯雞味濃厚，味道不會帶很重的味精味道，反而有種鮮甜香😋口感順滑，質感也不會很油膩
以咖啡的打泡法打起，所以可以看得見有豐盈的泡沫

以雞白湯為基底，加入蝦乾、魚乾一起烹調，的確多了一層海鮮的鮮味🥰-
兩道拉麵同樣配上低溫慢煮的雞胸肉、豚肉叉燒，肉質可以保持鮮嫩
掛在碗邊，可以就這樣吃，也可以沾上湯汁一起吃
拉麵麵條掛湯，質感也剛剛好🍜
除此以外，還有炸牛蒡，口感酥脆，作裝飾點綴，又提高了拉麵的整體層次😚

棵木煙燻糖心蛋 ($15)
糖心蛋奉上時已經切好兩半，可以看見流心的蛋黃，熟度控制的很不錯🥚不過雖說是有煙燻成分，但煙燻味道不重～
