To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 當知道美心中菜旗下的潮州菜館「潮庭」與「潮江春」會在今個10月與11月份推出主打新加坡潮州菜,以及多款新加坡經典地道菜式的「星潮尋味」期間限定menu,真期待要去一吃。個人一向喜歡加入了南洋色彩與食材的新加坡潮州菜,風味有別於在香港吃到的潮州菜。所以每次有朋友問起我新加坡當地餐廳推介時,我總會建議大家quota許可的話,預留一餐吃吃當地的潮州菜。這夜我們來到星光行2樓、誠品書店旁的「潮庭」。「星潮尋味」menu的菜式選擇頗多,先吃香口小食「酥炸鮮蝦卷」($98) 和「菜片包蝦條」($68) 。2款小食我都很喜歡,尤其賣相驟眼看有點像件細片厚薯餅的酥炸鮮蝦卷。酥脆腐皮包著五花肉、蝦肉與馬蹄等餡料,配酸甜桔柚汁吃,味道爽甜、食感層次豐富,就像新加坡吃到的蝦棗。「砂鍋魚皮餃肉丸黃菜湯」($138) 內的2款潮州餃與丸子都很有家常味道,真是comfort food。「砂鍋黃豆醬焗斑扒」($178),厚切石斑扒用潮州風味濃濃的黃豆醬醃過後生焗,味道多份鹹香。炒蟹可說是新加坡本土風味菜的代表之一。「星潮尋味」menu上有齊「辣椒蟹(配薄餅)」和「黑椒蟹」2款選擇($480,1隻1.5斤蟹 / $3

炒蟹可說是新加坡本土風味菜的代表之一。「星潮尋味」menu上有齊「辣椒蟹(配薄餅)」和「黑椒蟹」2款選擇($480,1隻1.5斤蟹 / $320,1隻1斤蟹),而且特別跟足當地做法,選用斯里蘭卡肉蟹。這晚我們人數夠多,辣椒蟹與黑椒蟹2款蟹都可以食齊,實在太好了。

而辣椒蟹,蟹肉同樣鮮嫩。紅紅的醬汁除了辣椒外還加入了番茄、薑和檸檬葉等,加上蟹本身的不少蟹膏,味道微辣中帶香甜。配上跟這道蟹上的薄餅,抑或另加點炸饅頭或麵條蘸汁吃都會相當滋味!

沒想到在香港也可以吃到如此濃濃的新加坡風味的一餐,尤其黑椒蟹與辣椒蟹,還有前菜蝦卷及甜品,頗有驚喜。
