It's like a spacious version of Tamashii. The chairs weren't extremely comfortable. Get a table if possible.

They serve a number of broths including Miso, Tonkotsu , Negi (possibly tonkotsu as well), "Special made Ramen " and "Kenkou (Healthy) Ramen".

I have to say it wasn't easy to identify the distinctive features of this shop.

I chose the "Kenkou ramen" (healthy ramen),
Thick noodles ( as opposed to a thinner type of ramen);
Hard texture (choose from 4 levels of hardness);
Flavored oil ( I suspect it's garlic oil);
With oolong tea.

Noodles: Very eggy. Similar to a very hard hybrid between yau min and Shang Hai thick noodles. A bit too hard for my taste.
 I recommend normal hardness if you choose thick noodles.

Char Siu:
Four large pieces of grilled char Siu. Three thin cut and one thick cut (not sure whether that's deliberate or not.)

The three thin ones were good. Good balance between fat and lean meat. Grilling it brought out more aroma.

The thick one on the other hand was fairly dry (as it's mostly lean meat) and tasteless.



Egg: This was not spectacular but decent. The egg yoke wasn't runny but the egg was flavourful.

Broth: Tonkotsu based. Fairly powerful Tonkotsu flavour. Somewhere between David Ramen and Nagahama No.1 but with a more detectable pork stench which many Tonkotsu fans should like.

Less oil than ButaO. Perhaps this, the decent amount of crunchy Japanese cabbage, spring onions marinated in sesame oil and the generous amount of nori were the elements of "healthiness" referred to.

I haven't had a decent Tonkotsu broth in a while so this came as quite a plesant surprise. 




Service: No complaints about it. When each customer left the place, they all said thank you in Japanese.

HK$120: not too sure whether it's healthy for your wallet!
