To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

慶祝我哋拍拖8周年,喺Openrice度睇完一大輪,決定去食呢間中菜廚師發辦。其實我一直覺得好多高質中菜好精緻,唔止係擺盤,而係煮嘅時候已經係功夫菜,廚師發辦又好,N道菜又好,中菜絕對夠格。今次呢餐亦都冇令我失望,9道菜,仲做緊買一送一限時優惠($1088),非常驚喜。第一道︰頭盤,藤椒墨魚、象拔蚌、梅酒赤貝啫喱(5/5分)一上菜就「仙氣飄飄」,現場效果好靚,但影相有難度。海鮮口感Q彈,醬料配搭適中,幾開胃,令人期待下一道菜,唯一係啫喱食落比較似甜品,覺得有啲格格不入。第二道︰龍蝦蟹油炒蛋(5/5分)用料足,龍蝦鮮甜彈牙,金黃嘅蛋口感濃稠有蟹油香,加上面頭嘅脆脆,入口層次更豐富。第三道︰酸菜松茸鯛魚湯包(5/5分)酸菜湯胡椒味辣得嚟唔會太刺激,松茸據介紹係煎過,以增加湯水香味,但食落作用不大,但整體配搭都係好嘅,個湯包餡料充足,剁碎咗嘅各式餡料,每一啖都好滿足。第四道(原菜單)︰A5仙台牛(5/5分)老公二話不說就摷亂咗,其實本身擺盤係靚啲嘅。由於我唔食牛,呢碟我冇食度,據介紹係紅酒烹煮,老公表示好食。點好食法呢,佢只係重複好食……第四道(轉換後的菜品)︰黑毛豬叉燒(5/5分)同餐廳講

同餐廳講咗我唔食牛,佢哋好貼心地為我轉咗做豬。呢個叉燒厚而不柴,肥肉部分入口即化,肥而不膩,我呢啲平時拒絕肥肉嘅人都肯食。左邊黃色嘅醬係芥末醬,似平時燒味配搭,右邊係柚子芥辣醬,入口清新,配肉更加平衡,我更為鍾意,但偏好傳統口味嘅老公認為芥末醬好食啲。

曾經有廚師同我講過,鵪鶉鬆都係比輕經典嘅菜色,將鵪鶉買返嚟剁碎去煮,配上唔同爽脆蔬菜同雜菇,面頭烤到好脆嘅豬再加少許黑魚子,再加埋下低嘅脆片,成個菜口感豐富,味道鹹鮮。

蒸籠底下個座有個發然包即時蒸煮加熱,令金不換嘅味道可以逼出嚟,加埋呢啲炒過嘅雜菇嘅香味,聞落已非常吸引。龍躉扣亦即係龍躉胃,非常彈牙有咬口,但一啲都唔韌,味道亦炆煮得好好,係一道濃味嘅菜。

食到嚟呢度已有啲飽,相比之下大啡菇松露好平常,其實都好食嘅,熱辣辣加上雜菌嘅香味,所以即使平常,都係會食晒。食到嚟呢道菜,發現餐廳好鍾意煮菇,我老公都話覺得似菇宴。

其實我唔鍾意漬蓮藕,喺呢道菜入面都覺得有少少多餘。飽魚三片咁堆疊,面頭嘅鹹菜有少少搶去成碟嘅味,令到味道較淡嘅鰹魚湯汁失色,對比下會覺得烏冬味道較淡。不過如果自己食嘅時候做好分配,其實都仲係會覺得幾好味嘅,同埋鮑魚都煮得啱啱好,而稻庭烏冬一向係質素保證。

張紙都係糖紙可以食,但味道就當然冇特別。食到呢度其實覺得超飽,仲要食奶凍真係太多了,寧願佢畀兩片哈密瓜我感覺仲清爽。同埋因為奶凍中有哈密瓜茸,口感唔順滑,失去咗奶凍嘅一大特色。所以呢道就較低分啦。

整體嚟講,每道菜都好食嘅,但我覺得餐廳可以再諗下菜品之間嘅味道配搭,因為頭盤之後、烏冬之前咁多道菜都係濃味,食食下會有啲味覺疲勞,最後個奶凍亦感覺好厚,唔係一個完美嘅句號吖。
不過喺日式廚師發辦大行其道,而好多其實都冇乜特別下,我強烈推薦大家試下獅房菜呢個中式廚師發辦,欣賞下用心製作嘅美食。

餐廳環境都幾好,空間感十足,枱唔算多,要食最好都係Book位啦。
