3年多前曾經來過Granada by JW食過午餐,印象非常唔錯!最近再訪,更加覺得食物質素大大提升咗去next level,有好多道菜式都有wow factors,好有驚喜!無論服務定食物質素都媲美城中好多星星餐廳,性價比超高!晚上有5道菜嘅Tasting menu :水牛芝士•蕃茄沙律水牛芝士蕃茄沙律好有誠意!用上幾款新鮮番茄,番茄酸甜有致,香甜多汁,奶香清爽嘅水牛芝士化身可愛嘅小圓球,配搭青瓜、西芹、柚子製成嘅油醋汁,味道及風味都好有層次!食過酸種麵包後,就輪到第二道菜啦!燒北海道帶子•白露筍•古魚汁北海道帶子燒至半生熟,肉質柔軟,重點係獨家秘製嘅古魚醬汁。大廚介紹呢種北歐醬汁以穀物及咖啡發酵後再加入海鮮高湯,好似魚露咁帶有鹹香但又唔會濃烈到搶走海鮮鮮味!配菜嘅白蘆筍亦花過心思,發酵過嘅白蘆筍似唔辣嘅韓式泡菜,口感特別!燒雅枝竹•火腿•黄油菌醬燒雅枝竹本身味道較淡,配上鹹香嘅24個月風乾火腿,creamy惹味嘅黄油菌醬,立即令整個菜式昇華!煎日曬宮城牡蠣•芹根•魚子醬煎日曬宮城牡蠣•芹根•魚子醬同額外加點嘅燉南非大鮑魚係成晚嘅MVP,完全係驚艷!宮城牡蠣經過一日日曬,味道好似金蠔

煎日曬宮城牡蠣•芹根•魚子醬同額外加點嘅燉南非大鮑魚係成晚嘅MVP,完全係驚艷!宮城牡蠣經過一日日曬,味道好似金蠔咁濃縮,但肉質又唔會話好似蠔豉咁乾身,食落依然濕潤軟熟。醬汁用上魚乾、乾瑤柱、海鮮、芹菜根部及日本長芋打成醬汁,再同矜貴嘅魚子醬一齊食,鮮味在口腔內迸發!

燉南非大鮑魚採用中式炆燉方法,用瑤柱雞湯熬煮至軟腍入味,本身已經鮮味突出,沾上甘香幼滑嘅鮑魚肝醬,鮮味加倍!我特別欣賞大廚加咗少許wasabi同芝士喺醬汁之中,中西日食材及煮法嘅碰撞,為燉鮑魚帶來全新嘅味覺體驗!

雖然小店係一人廚房,但每道菜都食得出大廚Joe嘅心思,完全感受到對煮食滿滿嘅熱誠!小店嘅人情味服務都大大加分,每上一道菜Joe都會同我哋分享製作及準備過程,又會互相交流唔同嘅飲食甚至飲咖啡嘅心得,呢晚我都穫益良多!希望小店繼續努力,我哋已經期待緊換新menu後再嚟試新菜式呢!
