雖然舊蔡比新蔡貴幾蚊,出品又慢,但係舊蔡啲食物質數、湯底、辣椒油真係比新蔡好少少喎。雖然新蔡我都幫親左廿幾年,老細又係我老友,但事實歸事實麻,邊度好食就去邊度架啦,不過我間中都會去新蔡抱吓場既。魚蛋鴛鴦加底加魚皮,魚蛋依舊爽口彈牙、魚味極濃;粉麵煮得恰到好處,麵嚥哽、粉棉滑。好多食家話啲炸魚皮賣相同口感好怪,所以我諗唔通依款魚皮係大埔先有?係依度好普遍架喎。魚皮會落炸粉炸,炸到啡黃色唯之完成,有陣時仲會連少少魚肉架。依款比坊間只撲啲粉炸既唔同,依隻更香口更有口感。可能有時做得無咁好,先會話好硬既啫,浸湯食都係一個好好既選擇,我都係浸湯食既愛好者黎架既,索晒啲上湯麻 ~ 食粉麵點少得辣椒酒呀,舊蔡係我既排行磅排首位,最鬼衰係不設零售,搞到成日心掛掛 ~
