Restaurant: 傷心酸辣粉 (金百利廣場)

To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 還記得多年前第一次在深水埗一間酸辣粉小店嘗到第一碗重慶酸辣粉,那時也不知道什麼正宗不正宗,只覺得那店的麵條多樣又特別,味道酸辣惹味,連飲品甜品也較外邊的有所不同,筆者深深被那裡的獨特煙韌粉條所吸引,不時也在回味。及後經傳媒報導過後,分店便越開越多,據說原來該店的老板曾親赴内地學藝尋味,才做出這小店的美味。而這數年間酸辣粉也頗受歡迎,不同的酸辣粉店開得成行成市,雲南、川式、重慶比比皆是,而因選擇多了,筆者也有一段時間沒有再光顧過這小店了。直至最近跟朋友在銅鑼灣逛街,一時間選擇困難症發作想不到去那裡醫五臟廟,偶然見到這小店的招牌,便屬意一起去尋回一下往昔滋味。入坐後看看餐牌,發覺較以前選擇多了,除了酸辣粉外,還有一些小食、水煮及小炒,筆者們兩個好辣之徒遂手起刀落,叫了一個二人水煮套餐及一道小菜。皇牌口水雞,紅紅的油配上帶微辣酸麻的醬汁,加上花生芝麻及芫茜,賣相吸引。雞皮脂肪不多,冰凍爽滑,肉質鮮嫩入味,中辣程度對於我們來說剛剛好,層次豐富。酸辣貢菜,貢菜又稱響菜,外邊較少見,但原來大有來頭,據說清乾隆期間曾用來進貢朝廷,由此得名。貢菜青綠爽脆,口感有點似筍條,配上酸辣醬汁,清爽開胃。水煮肥

水煮肥牛,以大盤上枱十分震撼夠份量,面頭厚厚的紅油加上勁多香料辣椒乾,飄來油香誘人,起初還以為會很辣,一啖湯汁送口,辣度適中帶點麻可以接受。肥牛份量頗多,不算嫩滑但肉味香濃,嚼勁口感略遜傳統鮮牛肉,算是各有風味。牛肉底下還有芽菜墊底,盡吸辣汁精華,惹味爽口,味道很突出,而個人更喜歡那些深紅色的辣椒乾塊,入口煙韌香辣,讓筆者停不了口,那種一邊食,一邊流汗,一邊流涕的感受,實在痛快。

泡椒米線,泡椒是湖南、四川等地的傳統調味,而這店的出品亦頗地道,黃綠色的泡椒加上紅椒芫茜夾雜湯中,淺嚐一口熱湯,湯水吸收了淡淡的泡椒鮮辣,配上滑溜軟糯米線,甘香醒胃。

乾煸肥腸,後加的這道菜,色彩奪目,在紅噹噹的辣椒乾塊堆中放滿了炸得香脆乾身的肥腸,味道鹹香,跟傳統做法有點不同,多了一份酥脆香口但少了軟糯入味的脂香,各有千秋。

整頓晚飯質素不錯,雖然部分味道有所更替了去迎合港人口味,但其實跟以前初嚐時亦相距不遠。筆者兩位好辣之徒整晚被紅噹噹的辣椒團團圍著,吃得頭皮發麻鼻頭冒汗,心滿意足地享受了一頓刺激痛快的辣宴。
