To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 元朗有間好高級的日本料理「鮨文」,之前都有聽朋友講過呢間食材全部好新鮮,今次終於有機會一試,今次仲可以坐系師傅面前,又可以同師傅傾計,真是幾難得師傅又仔細講解每款刺身/壽司的來源。茶碗蒸上面放上金箔,下面有蟹肉蛋又滑溜,食落底有元貝粒。真鱸:上面灑上柚子皮和啱鹽,可以帶出魚的鮮味。毛蟹:拆出蟹肉和蟹糕搞均一起食好鮮甜,沾上一點點醋更加可以突出蟹肉的鮮味。帆立貝:天婦羅帆立貝好大粒又鮮甜又爽口彈牙,用紫菜包上食一點都不油膩。柱貝嚮螺:用醬汁燒爽脆鮮甜。牡丹蝦:用北海道的赤牡丹蝦,將蝦頭的蝦膏拆出來燒配上蝦子,蝦膏好香配埋赤牡丹蝦一起吃非常鮮甜。鮑魚:鮑魚肝醬好creamy好香,鮑魚又吾韌,最後用一細團飯混合鮑魚肝醬一起吃味道非常濃郁😋中拖羅:食落好滑身,沾上少少醬油已好美味。大拖羅:肉質肥美,入口即溶,中間根味道濃郁。海膽杯是用網田海膽舖滿晒好多海膽,海膽好香,上面放上一隻甜蝦。海膽壽司用拍賣回來的赤海膽比較creamy。最後以皇冠頭靜崗蜜瓜做結尾,蜜瓜噴上whisky 又唔會搶左蜜瓜的甜味,蜜瓜好清甜又有淡淡的酒香。
