時間倒數回 2019年11月23日的中午,通過識食友人的預先安排,當天湊夠八位食友嚐 Omakase 壽司去!從門外一牌不掛、淺灰石屎牆壁的密封設計,「醍醐」低調的風格不言而喻!從左側的木門進入,數步可見容納八人的壽司檯,後方設有彌足珍貴的炭爐!喝著熱茶或凍茶,靜心等食!先端來茶碗蒸,內藏冬菇、雞肉、海苔等,料足滑溜!師傅和第一貫的壽司終於露面。兩手上下迴轉、指頭剛柔並重,捏出左口魚昆布漬壽司。經過一週的漬期,清爽的淡路島左口魚透出昆布之鮮!隨後是魚味提升一格的池魚壽司。這是經過十四天熟成的金目鯛壽司,魚質特別鮮嫩。當大家吃慣了甜嫩的帆立貝,這貫平貝壽司的爽感與甘甜卻令我格外欣賞,又跟赤醋飯帶出鮮明的層次感,雙重享受!剝皮魚及魚肝壽司是友人的大愛,兩者以鮮味討好味蕾,而我和老公則在幻想魚肝經灸燒後的甘香與肥美。細嫩嬌柔、令人產生憐憫的白蝦昆布漬壽司,不得不吃!再來是銀亮粉紅的希靈魚壽司!這貫煙燻北寄貝壽司,爽香鮮甜,非常的讚!日本人視赤鮭為刺身極品,肉質媲美喜之次,對品嚐高貴的赤鮭壽司,亳無懸念!鮮甜、滿滿海水味的毛蟹壽司,我來也!第一次看到製作繁複的鰹魚壽司,還未包括鏡頭後的事前處
