Restaurant: La Parole

To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 今晚約了家姐去上環柏廷坊的La Parole食法國菜。餐廳環境清靜有情調,座位舒適,私隱度高。我們各點了一個晚餐,共有六度菜式,非常豐富。上菜前店員先送上法包及合桃包,前者軟香脆,後者則比較鬆軟,可配傳統的牛油,亦有橄欖碎及番茄蓉可供選配,其中橄欖碎味道甚香,比牛油更夾。第一道前菜是北海道帶子二重奏:帶子刺身配意大利魚子醬及日本山葵,香煎帶子配海鹽。二重奏即是同一種材料有兩種口感層次,先試了帶子刺身,帶子鮮甜軟腍,即使不加山葵都完全無腥味;而煎帶子表面略煎,外熟裏面還有點生,比刺身多了一分咬口。第二道前菜是香焗蘑菇配新鮮海蝦、魷魚及巴馬臣芝士,蘑菇表面釀入魷魚粒及薯蓉,表面放上海蝦及舖上巴馬臣芝士焗至微焦,芝士味濃郁有咸香味,蘑菇肉汁豐富,肉質軟腍跟魷魚的煙韌成對比,蝦肉不夠爽口,比較腍身。餐湯是松露蘑菇忌廉湯配杏仁片,忌廉湯有濃郁的松露及蘑菇香味,而且每啖都咬到一點的蘑菇肉,整體很creamy。橙味雪葩清洗口腔內的餘味。第一道主菜是香煎比目魚配番茄醬及蒜片,比目魚皮煎得香脆,魚肉雪白,新鮮嫩滑,配上酸酸甜甜的番茄醬及香蒜味,為比目魚增添色彩及味道。第二道主菜是香煎法國牛柳配小紅蘿蔔及

第二道主菜是香煎法國牛柳配小紅蘿蔔及榛子,紅蘿蔔燒汁及柚子醬,牛柳份量比較少,只有半隻手掌大小,因為點了七成熟,所以牛柳中間還帶有粉紅色,牛柳肉味濃郁,而且有豐富的肉汁,非常juicy,配上柚子醬能中和油膩感。

最後甜品是蘋果批配雲尼拿雪糕,蘋果批有肉桂的香味,但不會蓋過蘋果的味道,而且甜度適中,外面的比皮焗得鬆脆,內餡的蘋果蓉及提子乾份量剛好,不會太多太滯,配上雲尼拿雪糕及士多啤梨,為美好的一餐劃上句號。
