難得地老細俾我收早,即刻落上環食返個嘆到痺嘅lunch course 😋👍🏻Sushi Course ✨前菜本日前菜為新鮮湯頁,奶白色的腐皮口感頗黏,豆香好重,加入入口即融的海膽作為點綴,豐腴甘飴。✨茶碗蒸與眾不同嘅配料,面頭鋪上足量的蟹肉絲,鹹香度十足,蛋味好清而且滑得過份✨握之壽司十二貫深海池魚肉質好彈嫩,魚油極香,以日式豆瓣醬去點綴,入口雙重口感滲入口腔;平政魚肉身較清,師傅配以鯊魚骨嘅酸辣去調味,魚脂感濃郁;新鮮帆立貝嘅肉身好厚,配上檸檬葉,味道更為清甜;金目鯛肉質較爽,師傅特意加上一片啫喱,食落清新又帶點滑溜;而赤蝦肉質透白,口感係食過最黏厚的,面頭鋪上即煎嘅蝦頭膏,入口豐潤;梭子魚經火炙後油份較重,無腥羶,口感好軟;野生呑拿魚色澤較深紅,經過十八日熟成,肉質更嫩,食落無筋;右口邊魚油份豐盈,配以脆身嘅紫菜,剛好用以中和;海膽壽司為今日精選,底部嘅米餅以赤醋飯打成米糊後風乾,薄脆口感極佳,而橘黃色嘅海膽,甘飴甘香。最後以一個焗蛋作結,極富特色!整體壽司米飯握得實淨,醋味適中(⁎⁍̴̛ᴗ⁍̴̛⁎)~間場 職員適時換茶~魚湯、甜品魚湯湯頭鹹香,配以昆布同豆腐粒。甜品相當有驚喜,咖啡啫喱晶
