用上了耶路撒冷雅枝支竹,絕對係非常矜貴(因為雅枝竹需要經過繁複嘅步驟處理,每個雅枝竹其實只有好少部分食得),以薯仔底做忌廉湯,味道濃厚,上面仲加入咗少少炸過嘅雅枝竹脆片,個口感好正好好味🤤

最喜歡這道菜,以65度低溫慢煮的伊比利亞黑毛豬,再將豬皮煎得香脆。肉質肥瘦分明,味道香濃,配上紫薯山渣洛神花醬,帶少少微酸中和油膩感。
