今日要介紹嘅係一間燒臘店,住元朗嘅朋友應該都會聽過添記燒臘呢個大名,要食添記嘅燒肉好講緣份,有時唔夠12點就會賣晒,有時突然放幾日假唔係街坊根本唔會知道,摸門釘係平常事,添記係香港碩果僅存用炭爐燒肉嘅燒臘檔,由於安全問題香港已經停發炭爐煮食牌照,現時香港九成半嘅燒臘都係用煤氣爐/電爐燒,炭爐燒嘅好處就係燒既溫度可以去到更高,爆出更靚嘅芝麻皮,食嘅時候就好似食薯片一樣。不過用炭爐燒十分考師傅功力同耐性,火侯稍為控制得唔好就會燒焦,添記對食材亦十分有要求,家母退休前同添記有生意上嘅合作,腩仔太肥唔要,太薄身唔要,有時食材唔啱心水就唔入貨寧願早啲收工,就係種種堅持,先做到咁高質嘅化皮燒肉。$28喺快餐店可能連一個餐都買唔到,但係添記就可以食到一碗神級燒肉飯,前提係你有冇呢個緣份。我就鍾意買返屋企煮個一丁慢慢嘆😋
