由細個開始,每次嚟親旺角,阿媽都會帶我食明記,佢話呢間舖喺花園街屹立咗好多年,早於廿三年前已經開始食呢度嘅豬紅(由於第度食唔到咁滑,我哋每次一話食滑滑豬紅,大家就有默契)。跟佢嚟得多,而家我久不久經過旺角都會口痕嚟食返碗同大部份嘅車仔麵檔一樣,先揀麵底,再揀餸,畀埋錢就自己搵位坐,見住老闆熟練地煮麵加餸加腩汁都係一種藝術。雖然一直都唔知每樣餸嘅價錢, 但我哋叫咗兩碗雙餸麵平均每碗都係$24,認真經濟呢度啲豬紅滑嘅程度係第二度食唔到架!!佢嘅質地介乎蒟蒻同啫喱之間,就算攞筷子用力夾住都夾唔散,滑得嚟好有彈性,而且能夠鎖住湯汁,一咬落去啲湯汁就湧出嚟,有時要嗌兩份豬紅先夠喉!!豬大腸煮到入曬味,而且洗得乾淨冇豬味。厚肉得嚟冇肥膏,有時會食到好似瘦肉嘅一絲絲,有時又會好似筋膜咁有咬口,口感豐富豬皮發得好好,爽口同時吸曬啲湯。最重要係掹乾淨曬啲豬毛,令人食得好暢快食得辣嘅話,落啲辣醬仲好食!欣賞呢度無論裝修定食物味道都堅持保留以前嘅風味,食物種類雖然唔多,但樣樣精,到我第日有小朋友都會帶佢嚟延續食滑滑豬紅嘅習慣
