To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 元朗有幾間出名的廚師發板,暫時只吃過2間。今次來試鮨文的15貫壽司午餐omakase。初初以為只吃壽司會好悶,但原來食到新鮮珍貴食材,味蕾都已經好滿足了。..每道壽司上菜前,師傅都會講解魚類是由那裏來,部位在那,整個感覺就是餐廳非常重視食材。印象最深是吞拿魚壽司,上菜的部位是「腦天」。腦天即是吞拿魚頭頂的肉,一條吞拿魚只得兩片,極為珍貴,食落口感軟滑,筋少但脂肪多,魚味濃,簡直是口感一大享受。..其他如鯖魚、帶子、甜蝦、油甘魚、劍魚⋯⋯和一般壽司店吃的味道感覺完全不同。好似尾二的一道海膽飛魚籽杯,飛魚籽是浸過清酒及柚子的,味道清身,而魚籽本身更是異常爽脆鮮甜!
