To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 要先說的是我倆對刺身壽司的認識並不深,但還是想試下這近期大紅的Omakase。.這晚與他來到了近期在元朗紅極一時的「鮨文」品嚐他們的Omakase,指的係由廚師發辦的刺身和壽司。由於當時人氣很高,訂位也訂了近兩個月才有位。.在訂位時已講明了要吧檯位,能看到師傅一邊的製作是一件賞心樂事,更岩晒喜歡影相的小妹,而且師傅更會有趣的教客人如何品嚐先會係最好:「所謂有紫菜既壽司要快d食,否則紫菜淋晒先食會死不足惜」,小妹真心笑了。.我們兩個都分別要了「正」套餐 $1000,包括4款刺身、6件壽司、1條手卷、魚湯、蒸蛋和甜品。.先黎的三款前菜包括黑松露蒸蛋、醃左既銀魚仔及糖蕃茄沙律。黑松露蒸蛋入口滑溜溜的,面頭放有松露醬,食落松露味頗重的。.糖蕃茄沙律入口很清甜,多了一份甜美的味道,好食!.在開始食之前,先擺好個陣,這板上則面放了些健康的淮山和牛蒡。.竹籤魚刺身還配了一小碗薑蔥豉油用黎醮黎食。魚肉經火槍燒過,入口帶有微微焦香,咀嚼中肉質帶有膠質,有咬口且魚味明顯,醬汁更能突顯出魚的鮮味。.日本新鮮運到的帆立貝刺身,黏性無咁重,咬落質感更加明顯的爽和鮮甜。.北寄貝刺身師傅切完後大力在針板一撻就上檯,
