今日突然想食正野,中午就點了個dry aged 黑毛豬配意粉,原本肉質已經十二分好,8,9成熟經已能享用,相比起全熟,口感味道各有千秋,喜好因人異議。個人偏好於接近全熟的中間點,金黃色外皮,軟滑多汁既肉質伴隨着熟成黑毛豬獨有的味道,幸福充斥着整個口腔内,一試難忘,回味無窮,溜連忘返。全扒熟度一致,突顯廚師功力,物超所值。點着少量海鹽享用更有另一番風味,若再叫上香煎午舌共同享用意粉的話,絕對能提升至人間聖物,天界仙物。配菜中和着香煎既油膩感,雙輔雙成,雙得益彰。
