離港近3星期,一回到香港就可以與好友來到中環IFC的四季菊,邊欣賞久違的無敵維港靚景、兼品嚐我向來大愛的日本料理,實在一大開心。這夜的時令前菜拼盤,賣相一貫精緻,尤其喜歡當中的津和井蟹肉醋物和鮮腐皮伴海膽,鮮味滿分。接著的湯品及刺身亦選用時令食材。金目鯛竹筍清湯的湯頭熱騰騰又清甜。而3款刺身分別有九州大分縣左口魚及熊本縣針魚,配愛媛縣赤貝,都是清爽春日好滋味。每次來到中環四季菊,其中一樣不可錯過的美食,就是由自稻菊時代至今一直坐鎮的日籍天婦羅老師傅Sakuma San親手炮製的天婦羅。這夜我們吃到的7款天婦羅,包括愛媛縣海老、姬小鯛、白子、海膽海苔卷、蛤、小玉蔥和楤芽。各款天婦羅都做得炸漿薄脆不油膩,香口但又不會蓋過食材本身的味道,相當出色。食事的蛋黃丼,突顯師傅的天婦羅功架。輕輕破開天婦羅蛋的外層薄炸醬,澎湃的蛋黃流出來,與香軟的米飯混在一起,每口都讓視覺與味覺大滿足。甜品抹茶雪糕亦是繼續天婦羅~ 外層微微酥脆燙熱,而雪糕還保持冰涼滑溜仍沒溶化,吃起來外熱內冰涼,口感有趣,為這精彩天婦羅夜做個甜美結局。
