Dacquoise (達克瓦茲)是一種以杏仁粉、蛋白和糖粉烘焗成的法國宮庭糕點。我第一次是從IG聽聞這種甜點,這次偶爾途經Lovever Patisserie這家店,想不到便是IG看到的那家香港首間Dacquoise專賣店。Dacquoise用料聽上去和Macaron差不多,但Dacquoise無論在味道還是質感都和Macaron不同。蛋糕外層酥脆,內層輕柔濕潤,甜度恰好,更有一點蛋香。店內有多款口味的Dacquoise,更會不時推出新口味。隨著解凍時間不同,Cream的質感也會改變。放進雪櫃質感綿滑,放進冰箱後解凍則像雪糕一樣。冧酒提子酒香濃烈,奶油味香甜;抹茶麻糬口味顏色呈深綠,茶味甘香不苦澀,用料上乘;伯爵茶味道清香,連蛋糕也混入了茶粉,香味昇華,亦足見甜品師的用心;花生朱古力不止有大量香脆花生粒,更有不少花生醬,跟內裏的朱古力餡很配。對於追求甜點輕盈感的人,Dacquoise會是不錯的選擇。
