難得留學十幾年嘅老友返黎香港,於是約埋三幾舊友一齊為佢洗塵,揀左中華匯館係想佢清一清咸水味,食返啲高質中菜拾回親切感。亦同時方便大家中環放工唔使咁急趕。花雕醉乳鴿。葽酒味香得黎唔會令人有醉意,因為係凍食關係,乳鴿嫩滑中帶結實亦無半點羶味。浸煮得連骨都可以咀嚼落肚。酥炸豆腐。咸香外表包住嫩滑豆腐,豆香幾濃,作為開胃前菜弔發食慾啱啱好。金牌叉燒。用上鹿兒島黑毛豬肉製成,叉燒甜度啱啱好弔出豬肉本身嘅甘甜,加上燒到有少少燶邊,全枱人一致好評。水晶蝦球。蝦肉都好彈牙,師傅將蝦仁開邊挑腸後再剁過幾刀做成花球狀,令到入口更爽滑。只用少許辣椒及香芧調味,完全係食出蝦仁嘅鮮及脆。話梅豬蹄。味道有啲似豬腳薑,但額外有陣梅子嘅香味。豬腳嘅油膩逼晒出黎,留低嘅係膠質及啫喱狀口感,酸酸甜甜令人回味。水煮魚片。雖然好多辣椒係表面,但辣味唔算高停留係口腔亦唔長,反正麻痺感覺會長啲。啱晒我啲想食辣嘅刺激又唔想辣到着火嘅人士。魚片好嫩滑,內藏嘅薯粉吸晒湯汁嘅精華,一定唔可以錯過。辣子雞粒。少許嘅辣味俾辣椒嘅香氣蓋得好多,雞粒一口大小又酥脆,覺得混和埋落水煮魚同食個未道會更夾。腐皮卷。一個字-酥脆。一咬落去卜卜脆,完全係
