一講燒鵝,就馬上想起「一樂燒鵝」和「甘牌燒鵝」。這天,去了近期大熱的「棋哥燒鵝餐室」,要了原隻燒鵝髀瀨粉$93,配熱檸茶。熱檸茶茶味濃郁,瀨粉配有菜芯,中規中矩之作。燒鵝,據說用荔枝木煙,並加上獨家香料,去腥之餘,還能讓燒鵝散發淡淡清香。挾一燒鵝一試,果然有一陣獨有的炭燒煙燻味道,鵝皮咬下去沒有預期的脆口,反而有點兒韌,要費勁咀嚼;由於是鵝髀位,鵝肉鮮嫩細滑,啖啖肉之餘,且脂肪層不厚。皮不脆這一點,是燒鵝的敗筆所在。
