油麻地舊區街角,裝修有點古氣,吃的是潮州麵食,以牛為本。牛腩,牛雜,牛丸,還有魚蛋,魚片,...今天就来牛雜撈米,腩汁。牛雜包括牛肚,牛腸,牛肺和牛膀。配上清湯,清湯先熬煮牛骨,带葫椒八角辛香味,好喝。牛雜,煮之前,清洗工夫多。內臟處理最難拿捏在於平衡兩字。清洗乾淨,穢味盡去是基本要求,但若然不帶半點牛臊香,味同嚼臘,也叫人不是味兒。牛肚盡吸醬汁,牛腸甘香四射,牛肺軟滑中帶爽脆,牛膀最難處理,香中帶粉糯,不羶不澀。再配上自制的辣椒油,刺激得肥膩感盡去,简直是绝配。
