To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 老火湯乃雪梨煲豬𦟌,在這炎炎夏日正好消暑滋潤。熱湯入口帶出微微酸氣,未知是雪梨沒有去心,還是某些藥材的反映。酸性的藥材一般有助寧神,正好舒緩受失眠困擾的小的。

鮑魚銀絲煲做得非常惹味,粉絲在砂窩內熱烤,小巧的鮑魚不覺堅韌,於濃味的蠔油醬汁烹煮下引出海洋氣息。由於用的乃新鮮鮑,是煲只索價二百多元,超值抵食!

雞本有多款選擇,小的知老伴喜歡香口,故挑了南乳吊燒雞。吊燒雞其實即是脆皮炸子雞,另附上一小碟橙色的南乳醬。吊燒雞弄得皮脆內軟,儘管雞種不是優質鮮雞,出來的效果也算不錯。

翡翠生魚卷小的不常享用,曾以為生魚只用煲湯,而且還是術後良品。在小的發病以後深作調查,始知生魚生肌,為怕術後傷口埋口過度,生魚已不再視為術後補身之首選。這樣地將生魚切片,披以生粉煎炸,始外還和以菜心,吸收脂膩,實為傳統粵菜的妙品。

海參榆耳炆鵝掌也是以砂窩形式奉上,保留食物的香熱。由於咱們被安排坐於門口位置,涼風不斷地吹送。茶杯裡的熱茶不一刻便給吹涼了,對於食物的情況則更為嚴重。幸好在有汁煮的砂窩底下,能稍稍為菜式保溫。海參當然是急凍品,不過尚能保留原整,不似小的於超市所買的凡品,只簡單地用水清洗時已給冲散了。或許是怕急凍海參易煮爛,是故大廚於炆好鵝掌後始淺淺地將海參煮一煮,使之保留完整。賣相有餘,壞處卻是不怎麼入味。榆耳澄橙色,起初小的還以為是珊瑚蚌,吃下始知那是屬於菇菌類的食材。

脆皮牛坑腩珊珊來遲地出場,卻是做得非常香口惹味。牛坑腩不怎麼肥,上層卻包裹著一薄薄的脆皮,提升了牛坑腩的滋味,亦緩和了牛腩脂膩不足的缺撼。點一點附以的潮洲辣油,絕對是刺激過癮,為是日晚餐劃上完美的句號。
