自從登龍銜起了變化後,的確多了機會過來用膳,就連太太的私人聚會都會列作首選地點,或者食肆多元化及有水準是其中的一個原因。四季禪位處金朝陽中心29樓,部份窗外景色開揚,感覺舒適。餐前先來一杯店方特製的Virgin Yuzu Mojito ($58),平日喝慣了Mojito,多數是帶有薄荷葉的香味,今次加入了柚子酒,多添一份甜美,在昏黃的燈光映照下,就更覺完美。如果喜歡喝兩杯,亦可選擇Dirty Saketini ($98)或是充滿越南風味的 Saigon / Sapporo Beer ($58) 。雖然店方以Homemade烏冬出名,但晚餐提供semi-buffet,無疑令客人有更多選擇。海鮮的款式不多,只得翡翠螺及青口,但體形比buffet中踫到的較大,而且在解凍的過程中處理得相當好,肉質保持了柔韌的口感。在其中一方的吧檯,可以找到炸蠔及天婦羅,脆漿比預期中薄,個人而言已經收貨,特別是炸蝦更加是外脆而內裡彈牙。至於另一邊有燒時令野菜、煎雞柳、煎蝦仁及煎鵝肝,同樣是即煎即食,夠熱辣辣,當中的煎鵝肝入口有即化的感覺,就算是膽固醇的朋友,都不妨來一件。壽司有辣味吞拿魚、加州卷、素菜野菌卷,跟

用越式牛骨湯底配合自家製烏冬,比起日式豬骨湯更有新意,雞扒有比下去的感覺,烏冬柔韌而有彈性,湯底清澈而濃香,足以令人吃過不停。

始終都是喜歡用滾湯淋在生牛肉片上,保留了似熟將熟的狀態,肉質鮮嫩甜美,可說是人間美味,更何況加上溫泉蛋,輕輕把蛋黃戳穿,將蛋汁混和在牛骨湯內,增添了一份滑溜的口感,當烏冬沾上了蛋漿,就更加可口。
