上星期由鴨脷洲坐171巴士回家,中途剛好停在位於堅拿道西的TETSU沾麵店的門前,這才想起自己好像很久沒吃沾麵了,今天看完電影《Me before you》後,便過來一試。小店是典型麵店的裝潢,廚房的牆刻意升高,隔絕了客人對內部運作的窺視,能看到的就只有煮麵時不斷升上來的白煙。這兒主打沾麵,但同時也有提供拉麵,餐牌的選擇不多,不過沾麵有分「普通」、「熱」和會員限定的「鰹.梅」三種。點餐紙每人一張,如果點沾麵,客人可以選擇麵的溫度、麵量多少和湯底的口味。四月點的是普通原味版沾麵,份量選了最低的200g,這個量女生也有可能吃不完。該店原有的配料只有蔥、荀和叉燒,嫌太落寞了,所以額外花了$9追加一顆味付半熟蛋。店方上菜速度挺快,可惜卻落錯了單,來來回回得花一點時間去更正。TETSU的湯底很出色,以豚骨或光雞、鰹魚節、鯖魚節等食材現以強火熬足一日半製成,入口濃厚的程度可以用Creamy來形容,鮮甜的魚香最為突出。湯碗只要稍為靜止一下,表面便起了一層厚厚的膠質。湯底容易冷掉是沾麵本身的缺點,要克服這個,真是各家有各法,像富士山55會用小鍋溫熱,這兒的話,可以點熱版,因為沾麵跟湯底本來是分開的,熱
