Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. 自助餐少見的中式冷盤相對好味很多。醉雞、燻蛋、涼拌黑木耳無論賣相及味道皆相當好,有滬菜風味。唯醉雞要配合自助餐要求方便客人自行取吃,瀝乾了所有浸雞酒汁鋪在碟上,欠缺了醉雞風味;雞肉雖然嫰滑但未夠濕潤,花雕及玫瑰露酒香亦稍嫌偏淡。

自助沙律吧芝士吧雖然自成一角,但擺放位置未夠顯眼,蔬菜種類、沙律醬汁及沙律醋款式亦未有太多選擇,與理想中的五星級酒店自助餐似乎有所落差。

煙三文魚刁草煙三文魚差不多是所有自助餐的必備冷盤,三文的質素很好,入口爽滑油潤。以「JW Cafe」的級數來說,凍肉就稍為令人失望,只有 salami凍火腿意大利豬肉腸(mortadella),欠缺了風乾火腿,就算只是coppa ham 也欠奉;只以加入了開心果的 mortadella 較有特色,有果仁香氣及提升口感。

自助餐當然不能缺少凍海鮮,有海蝦、花螺、青口、本地花蟹及麵包蟹;午餐較晚餐便宜,缺少了凍開邊龍蝦及阿拉斯加蟹腳也可以理解,採用本地花螺取代自助餐常見的翡翠螺就最抵讚。翡翠螺雖然大隻,但入口較硬身及肉質略韌;花螺雖然細細隻,但味道較為鮮美,肉質亦更爽口軟身。餐廳沒有吝嗇成本,捨棄價廉的東風螺(花紋不明顯、螺殼顏色暗淡)而採用身價較高、風味更佳的本地產海花螺。以自助餐水準來說,每款凍海鮮的味道皆幾好,屬平均水平之上。

前文提及「JW Cafe」以中式熱葷為主,西式熱盤就順理成章比較少選擇了,只見到煎鴨胸紅酒燴牛仔肉。味道似乎不差,但要預留胃納飽嘗其他中式熱盤,所以一小件也沒有品嚐。

淺嚐海鮮冷盤及其他頭盤之後,終於到了主角各款中式熱葷。基本上每一款都相當好味,同其他酒店自助餐側重西式熱盤而忽略中式熱菜餚比較,「JW Cafe」的另類路線的確出奇制勝、勝人一籌,難怪在香港五星級酒店自助餐排行榜(按好評 / 所有食評百分比計算)上,一直佔據前三位置。

印象中沒有西式餐湯,但既然主打中菜,有兩款中式湯水可說意料之中。燉湯及老火湯各一,兩款湯水同樣湯料十足。燉豬展正氣、原汁原味;老火湯合掌瓜煲乳鴿就勝在味道濃厚。

原籠即蒸蒜蓉蝦是其中一款主打中式熱盤,也是回本菜式之一。蒜蓉味道調校得很好,香甜而不辛辣。開邊鮮蝦亦已挑走蝦腸,細心抵讚。雖然入口已可分辨出並非游水海中蝦,蝦味稍遜、肉質稍韌,但仍算鮮甜爽口,較海鮮冷盤區的凍海蝦好吃得多,以自助餐質素來比較,絕對係超值。

燴花膠既是最大賣點,也是首選回本菜;如果可以用冬菇代替草菇,賣相會更佳、也更配合此菜式。為證明真材實料,刻意安排浸發了的花膠樣本展示區;雖然並非很厚身,但也相當大隻。花膠分很多級數,不同產地、不同品種的價錢差別可以很大;以展示的樣本估計,並不是太廉價貨色,如果可以吃得下三四件,已經回本。入口軟腍、亦有濃厚膠質;唯獨醬汁有改善空間,唔似只用傳統金華火腿老雞唐排炆煮,多了一種味道;影響唔算大、也不是很明顯,就是有點怪。整體來講,的確係驚喜,估唔到自助餐會有質素相當好的燴花膠。只是膠質太重、入口很膩,食了兩大件已經飽飽滯滯,加上其他美食,原來吃不下四件。

廣東燒味有廣東片皮鴨叉燒海南雞。三款皆較預期中出色,可以媲美坊間燒味名店,甚至酒店中菜廳的高級燒味出品。尤以海南雞最出色,雞皮爽滑,雞肉鮮嫩、有雞味。片皮鴨也不賴,專人製作片皮鴨卷,件件有鴨皮鴨肉,鴨皮夠香脆。

熱葷有兩款,一肉一海鮮,款式定期轉換;今日就是蜜椒骨蒸龍躉。大龍躉斬件蒸熟,有腩、有肉、有翅(魚鰭),總有一件啱口味。由於只是普通沙巴大龍躉,帶有少少泥味、魚味未算很鮮甜;勝在火喉控制得宜,魚肉保持嫰滑唔粗嚡,不錯。

蜜椒骨的醬汁採用蜜糖及檸檬汁調校而成,取代外國人眼中的經典中菜豬肉菜式甜酸骨或咕嚕肉;味道雖然變化了,配合鬆軟多汁的一字排,同樣好食。主食有銀芽中式炒麵,炒得香口乾爽。

最後輪到甜品,以近年自助餐非常流行的迷你甜點為主,另外也有六款完個切餅。差不多試齊所有款式,全部皆很好食,保持了五星級酒店的蛋糕 / 甜點質素。如果可以多些朱古力口味的迷你甜點會更好。

根據明查暗訪,「JW Cafe」晚市自助餐主要多了凍開邊龍蝦、阿拉斯加蟹腳、即切完隻風乾火腿、蠔皇炆鮑魚海參等貴價回本菜式,但每位就貴 $250 左右,是否值得就見仁見智;肯定的事實卻是,午市自助餐相當抵食。今年雖然繼續籠罩在疫情陰霾下,這頓團年 buffet 仍然是驚喜。
