7月完全冇假期,為左要好好獎勵自己,就去咗食Omakase。次次去食Omakase都會覺得戰戰兢兢,因為連自己準備食咩都唔知,所以餐廳嘅質素就分外重要。今日去呢間鮨逸,食材係由日本買手新鮮運到,亦會因應最當造嘅食材不定期更新餐單,所以就選擇係度叫一個有25道菜嘅set。為咗配合美食,特別叫咗支天之户純米大吟釀,屬於龜之尾種,而且係夏天特別版,飲落去味道較輕爽,有一陣淡淡嘅甜味。作為開場嘅係北海道白肉粟米,食落清甜。水母刺身,配合柚子醬油,酸酸地得嚟爽口,仲有海帶帶出唔同層次嘅口感,非常開胃。再嚟係用海膽打成嘅海膽豆腐,上面係馬糞海膽同德國黑魚子醬,食落有陣陣鹹香味同濃鬱海膽味,適合用嚟送酒。千草縣真鯛魚同昆布,配上柚子醬同裝飾用嘅食用紫蘇花,昆布醃左一晚非常入味,魚身食落柔軟帶少少酸。磯邊燒帶子,加咗少少七味粉, 用紫菜包起手食,新鮮得嚟有焦香味。北海道活水八爪魚,上面放咗酸酸甜甜嘅土佐醋啫喱 ,中間係八爪魚嘅吸盤,咬落好爽口,側邊八爪魚身則煙煙韌韌。千草縣嘅炸真鯛白子,口感有小小似豆腐,再食鮮味好重,反而有啲似蠔,而且少少鹹,適合送酒。油甘魚魚腩,只係熟成咗3日,所以仲係好滑,加咗柚

千草縣嘅炸真鯛白子,口感有小小似豆腐,再食鮮味好重,反而有啲似蠔,而且少少鹹,適合送酒。

油甘魚魚腩,只係熟成咗3日,所以仲係好滑,加咗柚子胡椒,少少酸而辛口,油甘魚油脂感重,入口即溶。

活北寄貝壽司,少少爽口,已加wasabi、醬油、青檸調味。

金目鯛壽司,肉身厚而肥美,輕輕燒過魚皮,帶出魚嘅香味。

壽司之後轉食湯葉刺身(新鮮腐皮)配三文魚子醬, 第一次試,豆味好重帶少少甘甜。

愛知縣白見貝象拔蚌,食落厚肉爽口,而且非常鮮甜。

日本米崎生蠔,淨係size已經不得了,有半隻手掌咁大,成隻生蠔脹卜卜,鮮甜多汁得嚟帶有海水味。

太刀魚,上面擺咗少少炸蒜,以豉油煮嘅魚軟身入味。

沖繩花竹蝦(青海老),原來係隔離魚缸新鮮撈起,只係一成熟,保持鮮味之餘啱啱好帶出蝦味。

北海道喜知次,屬於最貴價魚之一,食落去軟熟甜美。

北海道粒背響螺,非常清爽有咬口。

磯煮鮑魚,上面搽咗貝蟹膏,鮑魚慢煮咗4小時,好稔身易咬,蟹膏蟹味亦好濃。

然後就係福岡甘鯛松笠燒,魚鱗燒至脆身,食落上脆下稔,魚嘅油份重,肉質結實。

之後轉食吞拿魚,拖羅壽司上面擺咗少少日本大蔥,好香蔥味,咬落去啖啖甘甜脂肪,入口即溶。

吞拿魚醬油漬,魚肉肥美厚身,醬油味重,感覺有少少似黑毛豬火腿。

北海道白海膽, 海膽入面屬最高級別,比馬糞海膽清甜, 配合炸海帶中和口感。

來到晚餐嘅尾聲,有玉子布甸,蛋味濃厚,好似真布甸有上下層口感,又滑又甜。

最後係舞茸菇真鯛清湯,飲落去清清地咁,但係有淡淡魚肉嘅鮮甜味 。

甜品餐廳就安排咗水玄餅,配合黑糖食,清一清個口。
