狀態好不如運氣好,這晚在天沢,遇上高質食材、巧手製作,不得不稱心滿意!再加上我們包場沒有拘束,自攜美酒暢所欲言,實在盡興!作為2022年新店,天沢口碑一直好,所以訂位必須要趁早。今時今日,低於每位$2000的質素 Omakase 實在難得,話說回來,能否取得靚貨除了是本錢及師傅的本領之外,時令亦很重要,今年我最大的得著是決定了秋冬才去吃貴價 Omakase,因為無氈無扇、神仙難變!現在正時啟動時。 先講酒,4款5枝酒中,亮點在1992年的 Montrachet,金黃之色,可見年份之長,水份揮發,蜜糖味重,我喜歡。 另一枝岩 iwa 5,是香檳王前首席釀酒師Richard Geoffroy親手打造,限量發售,基本有錢都未必買到,酒質很順,很幼滑。晩上包場算13人,每位$1880另加一,共21品。午市更搶手,如果冇聽錯,是$728 15貫壽司或$1180 18品。 招呼我們的是真是震師傅、或名 Yu 師傅,程序上是刺身及壽司相間而上。 師傅備以酸薑、橋頭及蘿蔔,而別於一般,薑的酸度比較高,浸漬時間長並且厚切,初時還以為並非薑。$1880 廚師發板 -21品 先付-山湯、海老山湯,即是京
