今午好友約了我在美麗華商場一間潮州菜館用膳,幸而好友早已訂了位否則要在門外排隊等入座。我倆點了半隻麻醬手撕雞,碟頭頗大,鷄肉絲大少一樣,麻醬淋在已撕開一條條的雞絲上,撈亂後一起吃味濃而不油膩,非常嫩滑多汁,也有咬感。芋茸香酥鴨,把鴨肉拆骨,表皮香口亦酥脆,下層的鴨肉肉質能保持嫩滑,有嚼感,這道菜工序非常繁瑣,並不簡單,師傅手工真是頂呱呱。手打魚蛋煮津菜煲,很新鮮很爽滑彈牙的魚蛋和魚片配了少許方魚碎片,有嚼勁;再加上這些津白很鮮嫩幼滑,令整煲津白湯更添美味鮮甜。最後上了碗清心丸綠豆漺,很清澈的清心丸,爽滑彈牙,清甜可口的一碗甜湯,結束了這頓美味午膳,但假設甜湯後還能端上功夫茶給我們嘆嘆那就完美無瑕了。
