主餐牌全部都是燒肉,日式燒肉店當然以牛為主打,但也有少量日本產豚肉、雞肉及海鮮。店子源自九州,有理由選用鹿兒島產黑毛和牛,但日本各分店就選用佐賀產黑毛和牛,到底係價格原因抑或日本當地出口限制問題?

黑毛和牛之外,另外有沒註明產地的牛肉,估計是美國或者澳洲牛肉。想要更豪華?有鹿兒島 A5黑毛和牛,但就沒有西冷、牛柳或前肋排等稀少及牛花滿瀉的部位。

所有定食包括沙律、餐湯及小食,全部都有點特色。日式定食通常配搭柚子醋蔬菜沙律,用果酸味更濃的柚子醬代替柚子醋;更加開胃、亦減低了燒肉的油膩。餐湯亦並非普通味噌湯,而是海帶清湯。

辣醬牛舌帶點韓式風味,味道微辣可刺激食慾。採用牛舌邊緣位置,軟綿煙韌;如果用作燒烤食材會唔好食,但原來與這種醃漬方法幾匹配。如果白飯可以伴隨燒肉才奉客會更合適,始終白飯要熱辣辣才好吃。

日本若雞盛合午市定食($118)採用山口縣產雞肉,有齊主餐牌上的三款雞肉:雞腿、雞胸柳及雞頸柳。肉質各有特色。雞胸柳肉味較淡,肉質纖維最為鬆散,咬落去欠缺彈性,不過未至於粗嚡。勝在蛋白質含量高、脂肪含量低;稱得上為最健康的雞肉部位。

有雞皮的是雞腿肉,同雞胸柳剛剛相反,雞味重,肉質纖維緊緻,咬落去有彈性;加上雞皮爽滑;是最美味的雞肉部位。呈不規則長條形、黏連着一點脂肪的是雞頸柳。嚴格來講並不是雞頸,而是雞頸兩側連著身體的兩條肩肉。有雞味,亦多了脂肪油香,質感少少煙韌;口感更複雜,甚至好食過雞腿肉。

牛舌(定食追加)($48)只用鹽簡單調味,介乎厚切與薄切之間,容易控制火喉。一如其他日式燒肉店,選用牛舌心,彈牙有咬口。

特上牛腹肉($188)午市定食分量好似多過餐牌相片,加上每件牛肉的大細及厚薄與照片非常相近,有驚喜。牛腹肉已經預先用醬油醃製,每面烤大約一分鐘,七成熟,食得。牛味濃郁,充滿肉汁,肉質軟綿,有少少嚼勁、但又不用嚼太久。忍不住口食完一塊又一塊,二大一細分享,原來唔夠分!

單點黑毛和牛上肋骨中肉($198)。有點似韓式燒烤嘅壺漬原條牛肋肉,但就是那個寶藍色、斜身壺口的小壺,將牛肋肉外露,令賣相顯得更加吸引。雖然只是小心思,已彰顯日本料理醉人之處。

原條牛肋肉燒烤至表面焦香,然後剪成細塊,再略為烤香內層。牛味較牛腹肉更濃郁,肉汁同樣豐富;但由於牛肋肉有層筋膜,肉質帶點爽勁、需要咀嚼較長時間,未必人人鍾意。

甜品是另一個驚喜。鮮紅色小盒內放了兩份分別有獨立器皿的小甜品;感覺似是高級懷石料理,未食已經加分。雲呢拿雪糕糯米應該是現成來貨,味道沒有太特別。杏仁豆腐布甸滑溜、杏香濃烈,甜度又剛剛好;好想食多一份。

印象中最近大半年曾經光顧的中價日式燒肉店中,以此店最好味。而且價錢唔貴,值得推薦。
