如果要計正正經經食一餐潮州菜嘅話,我諗呢日係第一次。食慣高級食府嘅朋友帶咗我嚟陳儀興品嚐正宗嘅潮州菜,齋望門面已經覺得好骨子✨。一入餐廳已經見到坐滿人,好彩朋友訂咗枱,店員仲話今日Walk-in無位添!星期三晚上都咁爆,真誇張🙈。餐廳有兩層,並設有客𨋢,唔洗爬樓梯,不過其實座位唔算太多。我哋無得坐大廳位置,因為應該被其他人訂咗嚟聚餐,真可惜😣。我哋細閲餐牌之際,店員先為我哋送上功夫茶🍵,杯仔細細,好精緻。朋友講解功夫茶係指個烘焙泡茶嘅方式特別講究。餐牌有好多版,圖文並茂,好清晰👍,有圖有真相,始終潮州菜好少食,有好多菜式就咁睇個名都唔知乜嚟。朋友發辦,每個類別都叫啲試下,跟佢食就好了。前菜應該係涼拌苦瓜,不過酸味多過苦味😳,開胃。生醃瀨尿蝦Marinated Mantis Shrimp($198),我唔太喜歡平日煮熟咗嘅瀨尿蝦質感,因為肉身唔夠彈牙,蝦膏又實。點知原來生醃嘅處理方法係咁好食😋!瀨尿蝦唔腥之餘,仲好鮮甜,第一次生食先知咁正。生醃嘅醬汁帶點微微蒜辣同酒香,好惹味,但絕不會重口味,而且並沒有蓋過海鮮嘅鮮味。我朋友直頭想叫碗白飯食個汁😉。瀨尿蝦係一般尺寸,唔係特大嗰種,餐廳好細

魚露浸花甲Poached Clams in Preserved Fish Sauce and Basil($158),呢個係凍食滋味,花甲只係得返有肉嗰邊,啱哂懶鬼(即係我)🙈,大約有廿隻。本身有諗過呢道菜嘅汁會唔會同生醃個醬汁一樣,但兩者係有分別的。魚露浸花甲多咗層🌿金不換嘅香味😌,亦對比生醃汁清淡啲。因此,我建議食咗花甲先食瀨尿蝦!

鵝三寶Sliced Goose Combination with Goose Liver & Goose Intestines($228),雖然少食潮州菜,但我都知滷水出名。我哋冒住膽固醇超標嘅風險😆叫咗三寶,即係有鵝肉、鵝肝同鵝腸🦢。煎鵝肝就食得多,滷鵝肝係第一次,別有一番風味;依種煮法不比煎差,食落無咁油,而且口感綿綿的🤤。連平日唔食鵝腸嘅我一試就愛上咗,即刻啪咗幾條,因為無咩內臟味,而且好爽口,又唔似打邊爐咁會縮水。至於鵝肉就無咩特別,反面墊底嘅豆腐索哂味,但又不會過鹹,好食。不過略嫌擺盤唔夠靚。

二十年老菜甫燉鮮豬肚Double-boiled Pork Stomach Soup with Preserved Radish($68),我哋有猶豫嗌呢味定咸酸菜胡椒豬肚湯好,但見後者好似周圍都有得食,就試下新口味。個湯出到嚟同我想像中有啲出入🤔,因為原來廿年老菜甫唔多似平日好爽口嗰啲蘿蔔粒,而係同紫菜撞樣嘅長方體。個湯望落深色,飲落濃味,我麻麻,但豬肚就炆得夠淋!

潮州方味拼盤($108),即係包括四件傳統炸蝦棗Deep-fried Minced Shrimps Dumbling同四件古法炸粿肉Deep-fried Minced Pork and Water Chestnuts Dumpling,咁就可以一次過滿足兩個願望,食哂兩款口味!蝦棗係全日最失色的😳,唔係難食,但我以為係蝦丸好彈牙嘅口感,點知似免治蝦肉🦐再加馬蹄粒,唔通係潮州特色?炸粿肉就比較特別,食落感覺好豐富,因為餡料夠厚夠多,仲有啲似炸山竹牛肉,但我知係豬肉🐷。

陳年老菜甫肉碎粥Congee with Preserved Radish and Minced Pork($68),朋友話唔食飯,都要食碗粥,咁先有澱粉質落肚🍚。呢個粥好食喎,雖然份量好似話係一人前,但都好夠食。碗粥唔係煲到綿哂嗰種,而係似淋啲嘅湯飯,米粒大大粒,似珍珠米?呢碗粥好食又飽肚!

我哋亦都試咗兩杯潮汕飲品,分別係烏豆水Black Soya Bean Drink($20)同老藥桔Preserved Kumquat Drink($20)。兩杯味道都幾獨特,口味清香,唔會太甜,但估唔到老藥桔🍊嗰杯比烏豆水濃味,可以一試。

總括嚟講,呢餐陳儀興簡直係好食到返唔到轉頭嘅潮州菜😋,我宜家會有興趣試吓打冷!題外話,手功菜係要預訂先有㗎,所以呢日未能一嚐。餐廳有好多菜式都係以每位收費,但叫嘅量唔需要按人頭計算。除咗食物味道同用料方面,餐廳亦有注重上菜嘅次序同節奏,佢哋係會等我哋食完一道菜之後,先至上下一道,抵讚!
