原來紅橋有間主打雞白湯拉麵店,位置都有點隱蔽。晚市六點開始,店內座位只有12個,亦只有一個師傅煮麵,錯過了頭圍用膳,就要等一個鐘。▪️雞白湯拉麵 $98(附雞叉燒 、味玉、紫洋蔥、青蔥及香葉碎)頭湯味道濃厚,但無預期中綿密。店員建議中後段加入香葉令味道清新,但分別不大。麵條得一款,不能選擇軟硬度,口感偏硬,掛汁力亦一般。▫️ 濃醬油雞清湯拉麵 $118(附雞叉燒、味玉、紫菜、大蔥及青蔥)湯底以5款秘製醬油,包括日本手工製醬油調製,濃郁醬油麻香味而不太油膩。店員推介可加入黑椒粒提升層次,但味道有點蓋過雞湯。慢煮煙燻過的雞叉燒,不算乾柴但又未算嫩滑,普普通通;味玉有點過熟但勝在夠入味。▪️唐揚炸雞 $28即叫即炸,粉醬不多,調味剛好,口感細嫩多汁。拉麵店裝修較為現代風有別於傳統店,席前料理讓客人能夠觀摩整個煮麵經過。區內有特色的拉麵店不多,雞白湯也是;如果對拉麵要求不高,可以一試。
