To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

經常會到訪獅房菜,皆因真心佩服江師傅的創意和廚藝,每每都做出一些詩情畫意既出品,如不同版本的愛玲宴,與及唐詩宴等,無不令人讚嘆。今趟江師傅又玩新意思,以宮庭為主題既獅房發版,據知江師傅專程去故宮吸取靈感的。安頓好,便可以上菜。一嚟就以燕窩和豆花作開場,特別之處在於加入了荔枝成份,令滑溜養顏的燕窩豆花多一份清新氣息,是十分好的開端。接著來的小點,貫徹江師傅的風格,加插了乾冰的煙霧效果,仙氣迫人。像金字塔型狀,包括著滿滿餡料的素餃,好吃又健康。桂花腩叉鬆化又清香,蟲草花及爽口無渣的油燜筍墊在鴨舌之下,好在沒有被遺忘。當然,軟腍入味的鴨舌從來是我所愛。不管是什麼宴也好,就離不開湯品,今次有很家常味道的白菜、豆腐湯,師傅再放入大大隻花膠添貴氣,喝得舒服。煎至皮香肉嫩的比目魚,配上豆酥,來點像西式的擺盤,簡單討喜。數道菜色之後,以一杯帶有佛手柑氣息的三清茶來清清味蕾,再繼續下半場。隨之而來的,有幾分像現今的甜酸蝦球,用料靚,口感爽脆彈牙,汁醬平衡得好,夾埋菠蘿和酸薑同吃,結合精緻既擺盤,我喜歡這古代版本的甜酸蝦。扣鮑魚同埋煎金蠔,兩者都是我大愛的東西,以一枝髮簪串起,估唔到咁優雅。鮑魚帶點點麻香

看餐牌寫著蔥油麵,還以為是上海式的那種,但原來用上像烏冬,加埋甘味的苦瓜,以及豬肚,又幾夾喎!

要貫徹主題,甜品的糕點也做成玉璽般,靚到唔捨得食。這其實是開心果醬朱古力,好有趣!

喜歡佢除左用心設計食物,還特意選購了宮廷式的餐具來作作盛器,以貫徹其風格,可見團隊的一絲不苟。
