To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 日本旅行回來,一直很想念那邊的美食。於是寶寶便我到最近朋友間都推介的寿司の神。簡單的門面,木為主的裝潢。BAR檯前可看到師傅仔細地為客人準備食物。小小的空間讓我有種置身日本的感覺。這裡除了A LA CARTE以外,當然少不了OMAKASE。小食為宮城黃金粟米和靜岡蕃茄。宮城黃金粟米每粒粟米都很飽滿多汁,雪至清涼,咬落去啖啖粟米汁,甚是香甜。而靜岡蕃茄雖然只有小小的半個,加上一點微酸的醃菜放在上面,清新開胃。而且果醋酸汁不會太搶味,反而突出了蕃茄味的清新。刺身拼盤,先吃貝類,再由較淡味的白肉魚開始食,至味濃的紅肉刺身。響螺帶有淡淡的紫蘇香味,肉質爽脆,完全沒有腥味。深海池魚,魚味較淺,肉質比較結實有口感。伊左目,肉質較軟,味道較魚濃一點,魚皮爽脆帶點彈牙。鯖魚,個人很喜歡食燒鯖魚,反而很少食鯖魚刺身。刺身味濃,肉質柔軟。輕燒甘目鯛,稍為火炙過帶有點炭火香味之外,更讓其魚味更突出。左口魚(包芽蔥),芽蔥即是蔥最末端,但味道不會刺鼻,完全沒有搶走左口魚的鮮味。加上有點柚子味昆布在底,更能突顯左口魚的魚味。不過個人覺得左口魚最好食的原因不只是因為其味香甜,而是其彈口感,更為之添分。吞拿魚TOR

吞拿魚TORO,單看已經看得到其分明好看的油脂,咬落十分肥美香濃。肉質軟到有入口即溶之感。魚油很香,但食落不會過分油膩,甚是好味。

飯煮得剛好,而且味道不會太淡或太酸,影響整件壽同的平衡。

燒魚燒至骨脆肉香,就連皮都十分脆口。或者用鹽醃製過,所以魚皮比較咸,一定要連魚肉一齊進食。不過有部份魚肉燒到太乾。
