甚愛吃川菜,可是香港的川菜館不多,往往只有北上,才能嘗到正宗的川菜。近日友人提及銅鑼灣的這家川菜,說是由灣仔老鋪一路走來,近日十分火紅。難得發現香港也有正宗川菜館,當然要試試吧!    這川菜館在銅鑼灣耀華街,要登樓而上,一貫私房菜格局,裝潢較平實,店面不大,但雅致整潔。  餐牌上的食照只作參考,走的是套餐私房菜模式,不能散點菜式。一張點餐紙,按人頭計收費,二人是300元一位,可任選兩款涼菜和三款熱菜。以私房菜而言屬中價水平。不過個人認為還是單點比套餐好,個人較愛川式涼菜,套餐卻局限涼菜和熱菜的數量,感覺較欠彈性。  涼菜有十多款選擇,主菜則有水煮、泡椒、辣子、乾煸、家常、不辣和湯類。私房菜有這麼多菜式選擇也屬少見。  先上的是招牌四川涼麵(涼菜),在白麵條上鋪滿川椒辣醬和雪裏紅,再以蔥粒點綴,未吃已感到辣意。  辣度沒有預想中強,是中辛程度吧,不過已是今天最辣的菜式,辣中帶麻,那涼麵醬做得實在出色,辣椒鮮香夠辣勁,花椒香氣濃烈,川椒麻而不嗆,混成鮮辣的涼麵醬汁,味道甚有層次。麵條口感爽彈,醬汁掛滿麵條,作為招牌這一道涼菜做得實在出色。  因着這度出色的涼麵,對店家的辣醬更好奇了。侍應

另一道涼菜是蒜茸肚絲(涼菜)
這是一道香口惹味的涼菜,豬肚選了肚尖部位,切得極薄身,口感好之餘又不會靭身,幾乎感受不到蒜香,卻是麻油香十足,無論是味道與口感都相當不俗

主菜方面,性好挑機的老公竟未有選大熱的水煮魚,
這兒的水煮魚是用料十足,是重口味之選,卻選了冷門的尖椒嫩魚片(熱菜)

用上大量紅綠指天椒,也放了不少川椒和花椒,奇怪的是辣度卻不算高,反而帶一陣微微酸香。魚片是先蘸粉後再煮的,口感滑嫩,魚香卻差一點點。雖然魚片甚多,但配菜相對於水煮魚而言比較單寡,味道算是不俗,但驚喜欠奉,也許點水煮魚感覺會好一點。

泡椒鱔片(熱菜)用上小燈籠椒蘸製成的泡椒,中帶微辣,帶點酒香,這汁醬挺鮮香特別的。用上較香的黃鱔,加上爽身入味的西芹,食味不錯,只是份量較少

肉末土豆絲(熱菜)是一道不辣的菜式,炒得挺香口,配上肉末口感清爽,美中不足的是土豆絲不是手切的,若然是手切口感會再好一點

這川菜館愈夜愈熱鬧,而且當中有不少是熟客
整體而言這兒的川菜辣度較溫和,也許是要遷就港人的口味吧。
吃得出那些川式辣醬都是自家製的,採用的泡椒食材也較為少有,確是有其個人特色的,可以一試。
