我不常吃順德菜,以前印象中順德菜都是吃魚為主,大概是常聽到順德河鮮的關係吧,而我又不算特別懂得吃魚,所以就比較少吃順德菜,但原來順德菜的變化也不少。是日獲邀來到這裡試菜,除了順德菜中比較有名的魚類菜式之外,其他的菜式也甚有驚喜!冬瓜陳皮老鴨湯($388)。很適合夏天喝的滋補湯水,具清潤消暑的功效。湯水清澈,鴨肉經過處理,所以喝的時候多了一份香味,另外有一塊軟腍的冬瓜在湯裡,清爽不油,令人極速喝掉一整碗。家嫏煎釀鯪魚($188)。是一道非常有名的順德功夫菜,先把原條鯪魚拆骨拆肉,釀入手打鯪魚肉後再煎至金黃色。煎過的魚皮香脆,魚肉彈牙,配上特調的獻汁,味道更鮮美。鹽焗手撕雞($388)。手撕雞是選用約一斤的手撕雞,先把雞原隻焗熟後再一條條把雞肉撕出,配搭雞肉同吃的有海哲和瓜條,加上拌碟的薄脆,口感豐富,有海哲的彈牙,有薄脆的脆口,同時也有雞肉的嫰滑,有別於一般的手撕雞,不過我覺得略為鹹了一點。蒜子火腩生扣魽魚($288)。魽魚我不常吃,用蒜子、蔥和油把魽魚爆香,估不到是如此嫰滑,有點像常吃的薑蔥魚腩般滑溜,再者廚師加入了火腩和冬菇去炆煮,所以魽魚吃起上來味道就更濃郁。頭抽煎焗鱔片($298

頭抽煎焗鱔片($298)。頭抽的味道很香,完全能帶出鱔片的鮮味,鱔片肥美,油脂豐腴,肉質彈牙爽滑,整體味道恰到好處。

芥末蔥油撈墨魚螺片($288)。墨魚片和螺片非常爽口,也充滿濃濃的海鮮鮮味,本來就這樣吃已經很好,不過廚師以創新的方法,配以芥末及蔥油去調味,味道更豐富。不過為了遷就不太吃辣的朋友,餐廳方面特意把一部分芥末醬另上,讓愛辣愛搶鼻感覺的朋友自行添加。

大良炒鮮奶($128)。材料簡單但要做得好實在不容易,這碟炒鮮奶顏色雪白,入口香滑,奶香濃郁,不過要趁熱吃,因為多放一會的話,炸粉絲變腍了會影響口感。
