To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 曾經也付年費做過這集團的會員,但入會後一年也幫襯不到幾次.記得其中一次是去了apm的家傳滬曉,但印象已矇糊.來這裡也只是接近家人的住處而較為方便就腳而已.這店也可算是佔盡地利,隣近是沒有一家比較大型的京滬菜館,故晚上也多數座無虛席.根據經驗在這種場合如不想呆等,餐牌上有套餐便選套餐為上策.於是便選了一個四人套餐再加炒麵、生煎包及片皮鴨兩食,五個人來說也應已很豐富了吧!星期六的晚上全場爆滿,門外更出現長長的等位人龍,裝修環境在這區已算不錯.四喜烤麩----聞起來沒有香味.吃起來完全不是那回事!無任何甜味醬油質感稀得像水,怎樣去數碟上也只得兩種材料,何來四喜?陳醋肴肉----肴肉略硬身,入口溶化的速度甚慢幸還能吃到一點肉味.小籠包----有大量的湯汁在內,皮薄餡料鮮味.肉絲炒拉麵----拉麵吃起來質感咽韌但感覺頗油膩.生煎包----著實做得不錯!底部煎得香脆,包身軟棉內裡餡料肉汁豐富.銀杏鮮竹雜菌湯----嚐到腐竹的味道,雖看似只得蔬菜及菇類在內,但高湯的味道頗濃厚.七里香三杯雞----酒的味道不太濃,醬油的調味帶甜很適合配飯同吃,惜雪藏的雞件肉質有點霉.風味盬酥蝦----蝦的體形頗大,泡

四喜烤麩----聞起來沒有香味.吃起來完全不是那回事!無任何甜味醬油質感稀得像水,怎樣去數碟上也只得兩種材料,何來四喜?

雪裡紅金腿蒸黃花魚----蒸魚的時間拿揑得準確,肉質保持嫩滑但只吃到豉油和蔥的味道,金華火腿及雪菜完全發揮不了作用.

片皮鴨----由吃完所有餸菜起計呆坐等了45分鐘,真正千呼萬喚始出來!經理在極速下把皮連肉片起放在碟上,不消10秒已湧出大量血水.如此場景該經理完全視若無睹,還打算轉身離去.當要求更換得到的回覆是:"不如取消好不好?因恐怕重做一隻的話會有排等."等了這麼久到頭來是取消.

高力豆沙----新鮮熱辣那會難吃?外層軟綿內裡的豆沙餡料甜度適中.

其實整晚除了上菜次序混亂外(單尾的炒麵連頭盤也未吃完己上檯,吃到一半另外的頭盤才出現)未出現"血鴨"前的食物質素也尚算平均.問題除了出品部外,員工看見這樣子也不應該拿上檯給客人吧!
平心而論大部份食物也不致於是喊臉質素,這喊臉是給處理"血鴨"這件事上的失當.
