朋友升職加薪,同佢要慶祝下,佢話想黎食鮨一好耐, 我就負責book 枱由於我地book左枱,可以即刻入坐黎到發覺餐廳唔係好大,如果無book,真係唔知要等幾耐侍應安排左我地坐bar 枱,好開心,可以望住師傅準備食物睇過餐牌,發現有幾多冷門同地道日本佐酒小食,例如酒盜芝士,螢光魷魚,魔鬼魚翅,魚肝,白子等,但我地對季節限定比較有興趣看到另一位師傅處理緊d海產,我見到有喜知次,係日本空運直送我啱啱幾個月前係北海道食過Kinki喜知次,真係好懷念,而朋友未食過, 見價錢唔係比日本貴好多,朋友都同意要試下,所以要左一條鹽燒喜知次,估唔到咁快我又可以再食到喜知次另外要左2款刺身,粒貝&活北寄貝由於叫左3樣野都要等,所以叫左個鮨一沙律,邊食邊等鮨一沙律,顏色豐富,以新鮮魚生粒加沙律菜,日本蕃茄,同勁多蟹籽,新鮮度滿分粒貝刺身,質感有光澤,鮮甜爽口,口感實在,加少少醬汁更有提鮮作用見到原個海螺伴碟,先知原來係咁大個活北寄貝刺身,係香港第一次食到生既,平時食既橙色已經熟既北寄貝,好多都無哂鮮甜味相反,活北寄貝,即劏即食,肥大肉厚,口感彈嫩甘香鍾意食海產既,真係唔可以錯過喜知次,屬於日本高檔魚,亦唔係係

喜知次,屬於日本高檔魚,亦唔係係所有日本地區都食到,主要產地係北海道網走市,就算你去到網走市,都要睇季節同供應量,所以對日本人黎講特別矜貴,但我竟然係鮨一見到大大條喜知次

坐係bar 枱可以睇到師傅起魚鱗,清除內臟,一絲不苟
喜知次,燒好後,份量十足
魚皮燒得脆脆地,魚鱗清得好乾淨,我地連魚皮都食埋,香脆可口
雖然一定係冰鮮左,但空運到港,肉質亦保持相當高質&肥美,魚皮下溢出豐富既魚油,令肉質加倍嫩滑,有入口即化又夢幻既感覺
