To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 聽說元朗有家壽司名店,取名壽司之神,似乎甚有自信,好奇之心俱使下,駕車遠道而來,周六飛馳亦是一個的好節目。路不熟,下雨又塞車,遲到十分鐘,幸好門口路旁就有泊車位。門面是預期的基本日式風格,中日文套餐價格貼在門前,基本上皆是廚師話事。長方形格局的小店,壽司吧枱可容十二人,另有四張靠牆四人桌,壽司吧桌永遠最受歡迎,可惜今晚我們無緣。店內非常簡約,沒有甚麼佈置,留意到的,是店之末端掛上此久保田布㾾及酒櫃。有個別緻酒機作煮熱清酒之用。亦強調自己用日本米。我們告知預算消費及心頭好後,安排如下:吞拿魚沙律厚切呑拿魚件,周邊略煎,灑上黑白芝麻,內心保持生嫩,頂端黃色的是南瓜絲,亦配了一些青葱及日本胡麻汁。刺身口感,添加了辛脆口感,酸甜胡麻汁匹配滋味,開胃前菜合心意。刺身五款由淡而濃,白魚是鱸魚、幼獅、深海池魚,比較濃郁一點是鯖魚,最豐富的如常是拖羅。二款醬汁分別是酸汁及刺身鼓油,皆加進了大量蔥綠。前三款白魚配酸汁,新鮮香甜,回甘感覺甜美舒適。今晚的警喜在鯖魚,正值當造,從來未吃過這麼肥美的一件,入口魚脂滿嘴,豐膄不膩,令我對鯖魚完全改觀;而且,點綴之物非常特別,叫茗荷,是薑花之花蕾,味爽口芳香微甘,

牡丹蝦一分為二,頭尾留着,身軀作了刺身,身上刻意沾上蝦膏,肉質柔軟香嫩,鮮甜美味。蝦頭內仍有少許膏,蝦膏是淺棕色的。

蟹肉壽司卷, 越前蟹肉,塗上蟹膏,以紫菜卷著,鮮嫩香甜,口感豐富。

新鮮秋刀魚正值時令,實際上每年只有九月份有供應,正是我的心頭好,果然肥美香嫩,配了少許薑蓉蔥綠增香辛口感,只吃一件真是未能滿足,但沒有追加。

壽司之神,不外如是,選材上乘,交足功課,中高檔料理水準,但壽司未見有過人之處,包括魚片及壽司飯之功夫,全程沒有多大警喜,而且出菜次序有所混亂;服務態度良好但不熱誠,訂位出錯,雖然最後能安排到位置,但並非坐在壽司吧上,全程體驗大大失分,可能亦是只覺一般之因!

雖然是性價比不錯,相比港島九龍旺區確實便宜一點,但計上時間車程,依我來說就沒有這個必要再來。
