今晚老友在一家私房菜館請客,地方雖小卻五臟俱全。他早巳安排餐單,美味前菜:鹽酥脆鮮魷~外香脆內鮮甜美味彈牙;麻香拌海蜇~幼滑爽口;酒香醉鴨舌~酒香有嚼勁。滷水鵝片拼秘制鵝肝~鵝片口感滑潤,鵝肝油潤豐膄。懷舊脆皮羔燒羊腩件~羊腩油脂均勻,皮脆肉鮮既無膻味又不膩口,點些燒汁或薄荷汁有不一樣的風格。潮式紅燒花膠魚翅~滿滿的花膠魚翅很嫩滑,味道豐富湯底卻清甜,飲啖湯都滿是膠質。潮州鹹檸檬蒸黃鰭馬友魚~鮮甜的馬友魚並沒有被鹹檸檬搶了風頭,反而提升味蕾。潮式紅扣鵝掌鮮鮑魚~整道菜煮得好入味,鵝掌鮮甜有咬感。蒜子蝦乾浸大芥菜~甘甜的大芥菜無澀味與蝦乾的鹹香味互相襯托,突出了大芥菜的鮮甜。家鄉乾燒雙面王~香脆可口,加些砂糖或陳醋增添層次感。潮汕香葱返沙芋~香脆柔軟,鬆而不散。最後來了時令生果(提子)來完結這頓潮菜大師的懷舊菜。
