紅日的中環,除被菲傭霸佔之外,大多食店也放例假.去到鐵行里,楚記也一樣.外面另一燒味老字號的金華,照舊為人民服務,吃不成燒豬也想吃叉燒,找個位坐下,來個叉鵝瀨.叉燒肉質鬆化,外面燒得不夠焦香,燒鵝就肉味不夠,肉味不夠,外皮不脆,也不要緊,總之夠肥便可,因為肥鵝一定多油,鵝油加底下蝦殼大地魚湯底,頓成天下美味.小弟吃鵝瀨,一向以這種態度待之.
