約咗幾個老友一齊食飯,但又唔知食咩好,其中一位提意食小炒,揸車路經土瓜灣看見有間新的小菜館,發現啲鋪頭名真係千奇百怪,呢間竟叫做(楚撚記),開在一條以往的橫行內,但它也整理得很乾淨和過光猛。他分開兩面鋪頭接待客人,但其實位置也不算太大,但也坐得舒服,牆上也用了一些掛牌飾的菜名。先嚟叫個麻辣小食, 鳳爪煮得夠淋也很入味,用作前菜或送酒一流。鹹蛋黃近期都很流行用於食材上, 搭上白飯魚一起炸,炸後白飯魚還很鬆軟,面層有脆金香的鹹蛋味。大大隻彈牙的蝦球, 面頭鋪滿了炸脆的燕麥, 蝦球沾滿了鹹蛋的香味, 但咬落味道清新。呢一個黑松露煎魚餅, 煎得兩面很脆口,而又不會很油膩, 咬落墨魚沒蓋過黑松露的味道。炸得剛剛好,皮脆卜卜肉彈牙不韌,更帶一點點味鹹香味。呢個激辣水煮採用大豆芽及粉絲墊底,滲透辣的味道, 鮮魷味也很新鮮爽口, 辣味適中。有人說煮炒蜆很簡單,起碼蜆要沒有沙,這裏就能夠做出這點, 豉椒味香口能滲入厚肉蜆肉內,當然也不能蓋過蜆肉的鮮味。用上大條的新鮮深海泥鯭,再配上綿綿的粥底,食落很鮮甜,泥鯭也很厚肉,好耐冇食過咁鮮味的泥鯭粥了。小炒王一般都是用上這些材料,但當然也很講求師傅的技術,這師
