Happy Friday!難得限聚令放寛可與兩位BFF飯聚,今次試中環Sukiyaki Mori,相連鋪是同集團的日本燒肉店,同樣是店子細小空間較少,選址十分勺鑽不好找。餐牌精簡選項不多,簡說只有牛肉和豚肉,以sukiyaki或shabu shabu煮法。同行三人點了三個set,二人選牛 (近江牛),一人選豚 (鹿兒島豚肉),其他前菜,配菜及甜品都是一樣。前菜精緻,鵝肝蒸蛋喜出望外,蒸蛋香滑,放上煎香的鵝肝並淋上漿汁,加上山椒 (與原粒胡椒相近) 調味,既有層次又搭配,很想多吃一份。肉類和蔬菜由廚師在客人面前即場烹調,sukiyaki在日本有不同做法,此店源用關西風味,先將糖及牛肉微微煎香才加燒汁烹煮,味道較香口。每set有四片肉,牛肉有西冷、肉眼及肩胛不同部位。最喜愛西冷,油脂豐富卻不油膩,肉質是三種中最;肉眼肉味較香濃;肩位最平庸,脂肪少口感略嫌韌。基本上整晚廚師烹煮得比較熟,肉質欠缺和牛入口即溶的嫩滑口感。Sukiyaki燒汁也是另一個精髓,糖的份量全由廚師拿捏,這晚調味剛剛好。蔬菜也是以燒汁調味,新鮮可口;白飯可任意order,中和牛肉「膩」的感覺。隨後廚師準備最後一道牛肉蛋飯

温馨提示:由於廚師要在客人枱上即場烹調,而餐廰地方較小,最多只有四人枱,就是這個原故,我們三人被安排bar table位置 (不方便傾偈),否則坐四人枱再加廚師會很擠迫,餐廳不建議,若三人以上用餐要留意這點。
