To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

南北半球的季節是相反的,我們身處的香港正是在北半球之內,現正進入夏季之時,遠在南半球的新西蘭已踏入冬季,加上新西蘭四面環海,乾淨潔淨的環境,海鮮生長得特別肥美壯健。每年此時,新西蘭發展局都會聯同多間本港的餐廳合作推廣新西蘭的可持續發展海鮮,為食客帶來更多美味更為環保的海鮮食材。其中一間受邀餐廳正是位於金鐘JW Marriot內的萬豪中菜廳,大廚憑著這些優質的食材,設計出多款度身訂造的佳餚。今年特別推廣的海鮮有黑腳鮑魚、帝王三文魚、短頸蜆、藍鱈魚及綠唇青口等等,非常豐富。先來一道清新的【油鹽水浸蜆】,雖然在材料上的短頸蜆因新西蘭風季的影響而缺貨,但這款蜆同樣美味。蜆身白滑光鮮,肥大肉厚,以惹味的油鹽水來浸,更能突出了細緻幼嫩,飽滿多汁的特性,鮮甜無比。而也不要錯過吸引了蜆湯精華的粉絲,格外鮮味。另一道是【艇皇海鮮大會】,看見繽紛的色彩已勾起了食慾,豐富的食材實在吸引。如果覺得與上道差不多味道的,就大錯特錯了。因這道的上湯是由大量的魚骨熬成的魚湯烹調而成,魚鮮味濃厚,蜆肉依然幼嫩,可是青口更見肥美,入口嫩滑。不過,最驚喜的是帝王三文魚的質感,油份豐盈,入口如絲絹般滑溜,好比西式的低溫慢煮出

再來就是【味醬炒鮮青口】,之前兩道菜式味道雖濃,可是卻深深不及這道炒青口濃郁。味醬極之惹味,使肥大肉厚又嫩滑的青口鮮甜表露無遺,喜歡重口味的朋友不可錯過。

正所謂,好戲一浪接一浪,【梅菜皇蒸三文魚】絕對是亮點。相信沒人會將新鮮三文魚清蒸吧,極其量都是將鹽漬過的清蒸,可見大廚創新的意念成就了這道美味的菜式。三文魚的火喉控制得宜,依然幼嫩,重點是梅菜皇味道雖然濃厚,但卻沒有蓋過三文魚的鮮味,仍然吃到濃郁的油脂甘香,當然要吃墊底的茄子,盡吸了此道的精華,如此簡單卻又十分美味,值得在家一試。

相對地【松露三文魚卷】是美味的,可是感覺上三文魚的質感上有點偏硬,而且松露的香味過於強烈而蓋了三文魚的鮮味。另一方面,卻喜歡三文魚卷內捲有本菇,令層次感遞增,整體變得平衡。

【煎封原條藍鱈魚】的樣子就是我喜歡吃的油浸筍殼魚的高貴版,經高溫半煎炸的方式將魚的水份鎖住,仍然吃到鱈魚脂多嫩滑的一面,而當中的幼細魚骨更是炸得香酥脆口,可一併吞下,輕輕的以調味過的豉油提鮮,美味。

全晚的亮點絕對是【蠔皇新西蘭鮑魚】,體積之巨如兩個成年男人的拳頭,實在是鮑魚中的巨無霸。大廚深厚的功力令這隻兩三頭新鮮鮑魚燜煮得好比乾鮑般濃味,肉質更是軟腍滑溜,以刀切下時,更有少許煙靱黏刀的感覺,那鮮甜的鮑魚香味與鮑魚汁的濃郁味道混成一體,實在滋味無窮,看見價錢更令人笑呵呵,既經濟又實惠,絕對是推介中的重點。

最後的【乾蔥生爆鮑魚雞煲】是全晚除海鮮外的唯一肉食,不過就更使大家欣喜若狂,雞件已去骨,以乾蔥醬油來生爆,香噴噴的香氣已令人陶醉,加上幼嫩的肉質與腍滑的鮑魚相和應,令鮮甜的味道更上一層樓,實在好吃。

甜品時間來了,最估計不到的是這碗白雪雪的甜品,看上去一點也不滑溜,可是吃過一口後,感到的是幸福的感覺,相當滑溜之餘,還有隱隱約約的甜品,真的一茶匙糖也不用下,非常美味,這碗就是充滿豆味的【豆腐花】了。
