近日朋友愛上了食日本野,就介紹左一間銅鑼灣的日本餐廳給我,呢個朋友食開好野,唔係都唔會介紹比人,這間餐廳便是鮨㐂。一來到已看到整個餐廳以簡潔的裝潢作本,開放式廚房,讓客人師傅可以作簡單的交流外,更可欣賞到師傅純熟細膩的刀工。這次我們便選擇了廚師發辦 九件壽司定食($438)。當中已附前菜、沙律、季節茶碗蒸、鯛魚濃沙湯及甜品。蕃茄啫哩質感滑嘟嘟而清甜,配上海膽更顯其鮮味。爽脆的沙律加入黑加侖子汁的車厘茄,以及風乾了的香脆冬菇,令平平無奇的沙律變得色彩繽紛,味道更豐富。蟹肉茶碗蒸,入口嫩滑鮮甜。壽司九貫小白蝦壽司白蝦細細隻,膠質重,且入口嫩滑鮮甜。右口魚壽司刺肉質有少少結實,味道清爽,加上了少少葱碎更能帶出魚的鮮味帶子壽司鮮甜豐厚,掃上豉油後,更顯爽滑鮮甜。深海池魚壽司肉質更結實、非常爽口、魚味濃郁。剝皮魚+魚肝壽司剝皮魚肉質爽彈帶點韌性、味道鮮甜;魚肝味道濃郁,口感細滑;夾在一起吃油而不膩,原本較為膩口的魚肝與清爽的剝皮魚正好配成一對。池魚壽司魚味濃,肉質爽口。赤鯥壽司經過火炙後,把魚油逼出,油香四溢,赤鯥肉質柔軟,香味十足。海膽壽司入口清甜、質感幼滑,味道濃厚。拖羅壽司油脂分佈均勻,魚
