To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

弄堂一詞乃上海方言,意思解作小巷,小巷子乃充滿着家常美味的地方。香港的上海弄堂菜肉餛飩,賣的正是上海家味菜餚。最近一週雨總是下過不停,今天辦事途經跑馬地,突然下起大雨,反正未有午膳,沒有細加選擇,只見眼前有一上海菜館,便衝衝入內。坐下不久,侍應馬上奉上餐牌,看罷首頁,便知道今日可以嚐到從未嚐過的家庭味道上海料理。餐牌的第一二頁有着弄堂菜的定義。到底家庭菜跟非已往吃的非家庭菜有何分別,可從以下的幾道菜中體現出來。菜膽獅子頭香港上海館子一般把獅子頭紅燒,醬油味濃,而且獅子頭都充滿着肥肉,這裏做的只以上湯煨煮而成,並非館子吃到的濃油赤醬,肉球的肥肉比例低,雖然嚡口一點,但卻甚了健康少油。菜飯水準很高的一碗飯,飯有明顯菜味,估計菜粒是跟飯一同煮熟的,並不是時下菜及飯分開煮熟再混在一起的貨色。醉雞擔擔麵雞味普通,肉質太焾,花彫酒味過濃,很一般。擔擔麵則出奇好吃,花生醬的份量剛好,湯有着足夠味花生味,而喝的時候沒有漿着嘴巴的感覺。湯底本身鮮甜,帶有蝦米碎粒,整個湯我有着充實豐富的感覺。麵條煮得剛好的焾身,不糊不硬,時間拿捏準確。上海菜肉雲吞跟餐,所以只有四顆,皮滑有彈性,饀鮮味而肥肉不多,頗合口味

跟餐,所以只有四顆,皮滑有彈性,饀鮮味而肥肉不多,頗合口味。湯則很淡,只帶有輕微醬油味,眀顯不是擔擔麵的鮮甜湯底,奇怪為何雲吞會伴以淡味湯汁。

造法先把鯇魚以慢火炸至香脆乾身再煨以濃味醬汁,醬汁一般頗甜而且稠,不過這裏的醬汁相對較稀及薄身,甜味相對輕,但醬油濃香不減,這醺魚造得沒有一般上海老館子吃甜膩,個人認為相當討好。

皮厚,摺數只有十一二,摺口的粉皮更厚,這是一個缺點,但整體而言,這包子做得算不過不失,因為包子內湯汁豐富,做得不俗,優劣相抵下,整體水準變得合格。

弄堂菜價不貴,味道頗不錯,最可貴及可愛之處是菜少油少鹽,味精落得輕手,很設合香港人現今要吃得健康的口味。
