同事話呢間餐廳晚市的中菜唔錯,今晚約我一齊去食。樓下放咗餐廳菜譜,吸引途人去樓上食飯。餐廳都好大好寬敞,晚飯時間剛開始,客人開始光臨。侍應阿姐招呼好,即來一壺靚香片。十八號檯,同事至愛,話好 lucky,同時發板點菜。1. 金磚豆腐 $382. 陳皮話梅骨 $983. 脆皮牛腩 $1084. 世華招牌炒飯金磚豆腐:豆腐看似平凡,但要將炸豆腐炸到外皮金黃,內裡雪白嫩滑,實在唔易造。同時,外皮上了椒鹽,惹味可口。脆皮牛腩:這個菜功夫都唔少,首先要將牛腩炆腍入味,然後切成方件,再上炸漿,炸脆。炸的時候,火喉要掌握得好,否則外皮會炸得唔夠香脆,又或炸過龍炸燶。更甚者會將內裡的牛腩炸乾變韌。這個就剛剛好,造到外脆內嫩。外皮炸到金黃香脆,內裡的牛腩仍保持腍嫩,而且牛味濃郁。醬汁方面有兩款,一是喼汁,二是甜酸汁,我比較鍾意個甜酸汁,因為少少的甜酸味更能提升牛的味道。陳皮話梅骨:這個菜外邊唔易食得到,個汁係真材實料用話梅來造,味道超正。排骨肉多,骨肉亦容易分離。我建議大家食這個話梅骨的步驟是,首先挾起一件骨,用鼻子聞一聞話梅的香味,然後,放入口內,做舌頭啜一下話梅汁,試真個味道,再慢慢咀嚼肉嫩的排骨,

炒飯炒到粒粒分明,睇真啲,原來有好多好多鮑魚仔,唔怪得知這個炒飯是招牌炒飯。細心細味一下,原來還有鹹蛋黃的香味,呢個炒飯真係好掂,值得推介。
