. CHAR SIU RICE -
Take for example 金華燒臘麵家 Kam Wah. Their Char Siu is famous for being different. It is cooked inside an enclosed roasting oven, it uses top quality meat and is tender and balanced. It is also different from most other shops, as this version comes with a laddle of a thick gravy spooned on top, which is quite similar in technique to Yung Kee's Roast Goose, 大埔東江雞酒家's 鹽焗雞, or Tian Tian's Chicken Rice in Singapore.
This shop never fails to impress in the quality of the roasts and personally is better than many other shops out there on a consistent basis.
