因為怕太飽嘅關係我哋都冇試晒所有麵包
但作為米芝蓮三星餐廳 麵包都非常之高質
首先所有嘅麵包都做得非常之鬆脆 麥香味非常之重
我會比較推介Baguette 外面做得鬆脆之餘內裏亦都非常之柔軟煙韌

🎈Amuse bouche
我哋個日既開胃小食係 Jerusalem Artichoke 耶路撒冷雅枝竹
巧合地上次去過米芝蓮一星嘅Épure 開胃菜同樣都係雅枝竹
相比起Épure用雪葩做出酸酸甜甜嘅感覺Caprice就有少少相形見絀🥲
廚師將雅枝竹去左個頂 只係留番根部做前菜 個底配一層魚湯啫哩 再配上少少黑松露
味道黎講 其實雅枝竹係偏淡既 個texture似蓮藕 不過就會帶一點淡淡的黑松露味🤣
而下邊既mousse 加埋既味道就好奇特 有少少鮮味又有少少咸味
作為一個開胃菜來講都算係相當Heavy

🎈Appetiser - Foie Gras with Corn Custard and Rhubarb 鴨肝伴粟米燉蛋及大黃根 🐝
呢個頭盤擺得真係十分靚 靚到幾乎唔忍心食🤤呢一個絕對係加分位
呢一碟菜主要分咗兩層
👉Toppings 有d燒過既粟米同爆谷 中間粉紅色既就係大黃根 係一種類似西芹嘅植物
👉上層黃色既係粟米燉蛋 帶點微甜
👉下層係鴨肝蓉 有少少似Mousse嘅感覺
鴨肝伴粟米呢一個配搭我都係第一次嘗試
一入口就會食到濃郁嘅鴨肝味 再加一浸甜甜嘅粟米味 非常特別
有別於傳統鴨肝用煎嘅方法 呢一種冷盤上嘅形式會冇咁油膩
但個人認為鴨肝本身已經係一樣比較Heavy嘅嘢 再配埋甜野就有少少overloaded 🤏
雖然廚師已經巧妙咁樣配上大黃根 但係呢一浸小小嘅酸味實在唔能夠中和鴨肝再加粟米甜膩嘅感覺

🎈Soup - Bouillabaisse with Fresh Seafood, Classic Rouille and Lemon Condiment 特色海龍皇湯伴海鮮及檸檬配甜椒醬
呢一個馬賽魚湯嘅主角絕對係條魚 經waitress 介紹呢一條魚類似紅衫魚🤣
不論係外觀定係質感都真係同紅衫魚有幾分相似 但佢嘅肉質係非常嫩滑
個湯就稍咸 如果當個湯係汁同魚加埋一齊食嘅話就恰到好處💁🏻‍♀️
呢個湯比較特別嘅係左邊嗰粒圓形啫喱 佢個感覺就有少少似爆珠😂
咬開出面嘅啫喱之後入面就會有少少檸檬醬汁
可以話係幾特別嘅配搭不過我都係唔係太識欣賞😂

一講到湯大家第一時間都會諗起龍蝦湯蘑菇湯等
但其實呢一到嘅青豆湯都有佢嘅精妙之處 佢勝在層次非常之豐富
👉青豆湯打得非常幼滑creamy 一d渣都飲唔到
👉個底有一絲絲既薄荷葉 添加一份額外既清新感
👉有三個杏仁泡沫 會透出淡淡的nuts香味
👉 雲吞皮搓得好薄 煮嘅時間剛剛好令到佢嘅口感煙韌 入面羊奶芝士既羊奶味亦十分重
成個combination 配搭得幾好 個湯幾refreshing 👍
以至於加埋芝士雲吞食都唔會好Heavy balance得唔錯

可能對於主菜既期望都幾大 呢個質素會有少少失望🥲
👉肉質方面
魚肉煎得比較乾 而且個魚本身係偏瘦既品種🥲
肉纖維係比較長 似係柴魚咁 係先天缺憾
👉調味方面
海鮮汁不錯 應該就係拎番海鮮湯加莓類既果汁煮既
味道酸酸甜甜 後勁就食到海鮮既鮮味👍
魚肉上面一粒粒既柚子jelly 再配搭醬汁既味道 調味幾有風味
但都彌補唔到魚肉本身既不足 味道相對平淡
👉配菜方面
茄子煎得稍咸 而鷹嘴泥餅中間既調味就唔係好夠

呢道菜主要既調味就係個燒汁
幾惹味 配牛肉食更突出肉味👍
👉配菜方面
有甘筍 洋蔥 大蔥等 伴碟仲有南瓜泥💁🏻‍♀️
比較Surprise 既係佢甘筍有別於一般餐廳咁切粒上
大家細心啲留意其實佢係將甘筍切左薄片再卷埋放上牛肉
呢個做法令原本爽口既甘筍食落更有層次感
而且個南瓜泥甜甜地 食道菜食落好rich😋

除左非常睇得之外 佢既味道同質感既層次都係非常豐富
👉開心果雪糕 非常nuttiness
👉焦糖忌廉清淡得來帶些許甜味 而且相當幼滑
👉朱古力軟心蛋糕有非常濃郁嘅朱古力味 蛋糕亦都好軟綿
雖然係三種味道 但係每一樣都可以獨當一面
成個甜品好rich 好balance 令人非常之難忘🤤

Caprice嘅甜品做得非常出色 呢一個亦都係一道非常之有層次感嘅菜式
無論口感同外觀都合乎三星米芝蓮嘅水準
👉頂層嘅係一塊焦糖脆片 帶點粟米味 左上角仲有一片小小嘅金箔 高貴感十足
👉跟住落嚟嘅係吉士醬 可以好清晰咁見到一點點嘅雲呢拿籽
👉而紅色呢一層就係呢一個甜品嘅主角 waitress 介紹嘅時候亦都有提到蘋果切片後經過反覆烹煮 足足煮咗三次🤣
可以好清晰咁樣食到一片片蘋果 但係同樣佢嘅質感都係非常之軟糯 就好似蘋果醬咁
👉最底層亦都有一層酥皮 好鬆脆👍
👉雖然旁邊有雲呢拿雪糕 但比啲雪糕更令我難忘嘅係佢上面嘅一小片朱古力
唔好以為佢只係裝飾用 佢係一塊少少果香味嘅白朱古力
酸酸甜甜嘅口感同蘋果非常之夾

🎈總括而言
甜品比較令我難忘 不愧係三星米芝蓮餐廳嘅質素
雖然前菜同埋個湯稍微有少少令人失望 但整體嘅食物質素都可以👍
除咗高貴典雅開揚嘅環境之外 令人印象深刻嘅就係服務質素
不論係waitress 細心地用匙羹柄撥走枱面嘅麵包碎 定係即刻用餐巾去蓋住唔小心滴喺枱面嘅醬汁
都令人體驗到一絲不苟 賓至如歸嘅服務態度
