Restaurant: Jashan Celebrating Indian Cuisine

To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 喺晚市免費送,一人一份,仲要晚晚不同,我哋得到嘅配搭喺蕃茄湯襯薯蓉烤餅,前者微暖,蕃茄酸香中帶有微辣,幾令人開胃;後者一小件烤餅,加上薯蓉、蔬菜碎及醬汁,一口一件,輕易幹掉, 但味道唔會有太大驚喜。

點解特別點題「檸檬融入印度菜」,因為朋友近日從食友網誌發現Jashan新推出專為依個夏日而設,特別加入以檸檬為主題嘅新菜式,趁限期前一試檸檬 x 香料嘅印度味力
。「檸檬」菜牌甚照顧周到,由素食前菜、非素食前菜、主菜、米飯、特飲都一應俱全,單點依個餐牌菜式都足夠湊成一份整全嘅晚餐
。事後聽印藉經理講,話依個夏日菜式都幾受歡迎,餐廳決定延長,不過,就未知何時完結。

「檸檬」菜式有兩道菜以雞肉入饌,兩款都做得好食,先介紹依道烤雞,睇菜名就知雞件以青檸及椰子做醃料,所以烤雞嘅味道點酸香及椰香,不過,又唔會太濃,大抵廚師想保持個清新感;而烤雞技巧做得真有一手,外職燒得金黃焦香,而肉質保持到滑溜,富肉汁而唔會「乾爭爭」。就算唔蘸點附上嘅薄荷醬,都同樣好食!

第二道雞肉菜式喺牛油咖喱烤雞,抱歉只影咗菜式賣相而忘記影番啲雞件,跟上述一道菜一樣,雞肉真喺煮得軟滑,而整道個靈魂小弟就覺得喺個醬汁,橙紅色嘅牛油咖喱醬,香得嚟酸酸辣辣,溫和得平易近人,但又不失印度咖喱集多種香料嘅多元性
,所以,之前蘸印度烤餅,抑或撈印度飯都咁好味。

Pickle Machhli 香檸泡菜燒鯖魚 $138
泡菜?依道燒鯖魚感覺上都幾破格,但試過之後相信喺一個美麗嘅誤會,大抵我哋受韓風影響厲害,一見「泡菜」就自我設定為韓國泡菜(Kimchi),之後再細心睇番個菜牌,喺Pickle嚟,即喺一啲醃菜,有點恍然大悟
。鯖魚似乎喺似炸多過燒,故此,有啲似炸魚塊嘅樣子,首先,啲魚塊入口確喺滑身,外層嘅脆漿又幾香脆,又唔油膩,不過,相信以醃菜醃魚嘅份量稍多或時間過長,有過鹹嘅情況
,檸檬香味又未見突出,要唧啲檸汁,沾一點薄荷醬平衡吓,建議店方將中文譯名改為「香檸醃菜炸鯖魚柳」可能切合少少。

Jashana Dal 香檸燴黑扁豆 $85
黑扁豆經長時間燴煮成半豆蓉,口感綿綿粉粉,所以,難以見到有完整嘅粒粒黑扁豆。因為加入唔少香料去煮,故此味道幾有層次,惹味香濃,好似上面個牛油咖喱醬咁,非常適合以印度烤餅或印度飯嚟一齊食。

以幼身、修長見稱嘅印度米,拌入檸檬汁、咖喱葉去炒嘅味道會喺點呢?飯粒炒得乾身唔油,質感軟綿,唔似絲苗米咁黏,又微微檸檬幽香。雖然有話拌咖喱汁或稍後會分享嘅菠菜蓉好好食,但一客約3-4碗飯嘅份量左右,定價其實有點偏貴

此外,我哋夠齊腳,所以,亦有從主餐牌多點幾款菜式,可以比較一下店家傳統印菜嘅手勢如何?雖然主餐牌已分好前菜、沙律、燒烤、雞類、羊類、海鮮、蔬菜、麵包(印度薄餅)、米飯、甜品……等類別,但內裡所有菜式都喺印度名字嘅菜名,輔以英文描述,故此都要費一費思量睇睇菜式喺啲乜。

以為喺煎薯仔或薯角之類,其實喺印式薯餅,話喺薯餅,口感有啲似糕嘅質地,入口有種韌勁;而雞心豆作為伴菜放晌碟嘅一旁,粉腍嘅雞心豆都幾好食吖,整體而言喺一道好平實嘅印度小食。

單睇菜式真喺無可能知佢喺乜,不過,一睇英文翻譯(Prawn with Cinnamon and Garlic)就知喺心水菜式。類似中式嘅炒蝦球,好就好在拆晒殼方便食,但小弟就覺得以原隻鮮蝦呈現應該會更有睇頭。蝦球嘅味道幾複雜,有點肉桂、蒜蓉香,又有陣蕃茄味,少少辣,幾惹味,但喺鹹咗啲,蝦肉未夠爽,喺兩個失分位。

唔使講,大家都唔明喺咩嚟,即喺菠菜燴茅屋芝士(Spinach with Cottage Cheese),雖然個賣相有啲樣衰,但確實又幾好食。菠菜煮成蓉,入口軟軟綿綿,菠菜好嫩滑,加上茅屋芝士,味道唔寡,放晌印度烤餅一齊食喺個人心水食法。

,今晚,跟朋友一起,又喺食得盡興嘅一晚。對於個「檸檬」菜牌,仲喺覺得檸檬成份可以加重啲,先更能突出「檸檬」依個主題!
